Story of the Dish

Fonduta Valdostana is one of the oldest and most elegant dishes of the Aosta Valley. Unlike Swiss cheese fondue, the traditional version is prepared exclusively with Fontina DOP, the iconic alpine cheese produced from the milk of Valdostana cows grazing in the high mountain pastures.

The cheese is slowly melted with milk, egg yolks, and butter until it becomes perfectly smooth and silky. Traditionally served with toasted bread, modern Michelin-starred chefs have transformed this rustic classic into a refined appetizer by pairing it with a perfectly cooked poached egg and delicate shavings of fresh black truffle.

When the egg is cut open, the warm yolk blends into the creamy Fontina fondue, creating one of the richest and most luxurious combinations in Italian cuisine.

Ingredients

Fontina Fondue

  • 14 oz Fontina DOP, rind removed and diced

  • 1 cup whole milk

  • 2 egg yolks

  • 2 tbsp unsalted butter

  • Freshly ground white pepper

Poached Eggs

  • 4 large eggs

  • 2 tbsp white vinegar

  • Water

Crostini

  • 8 slices rustic sourdough bread

  • 2 tbsp extra virgin olive oil

Finish

  • 1 oz fresh black truffle

  • Micro herbs

  • Chives

  • Premium extra virgin olive oil

  • Fresh cracked black pepper

Preparation

Step 1 – Prepare the Cheese

Place the diced Fontina in the milk.

Refrigerate for 2 hours.

Step 2 – Make the Fondue

Cook the cheese mixture over a double boiler.

Stir constantly until completely melted.

Whisk in:

  • butter

  • egg yolks

Cook gently until smooth and velvety.

Season with white pepper.

Do not boil.

Step 3 – Toast the Bread

Brush the bread lightly with olive oil.

Toast until crisp and golden.

Keep warm.

Step 4 – Poach the Eggs

Bring water to a gentle simmer.

Add the vinegar.

Create a gentle whirlpool.

Cook each egg for 3 minutes.

Transfer immediately to ice water.

Reheat for 30 seconds before serving.

Step 5 – Michelin-Star Plating

Spread a generous circle of warm Fontina fondue in the center of a large matte white plate.

Place the poached egg directly in the center.

Arrange two artisan crostini beside the fondue.

Shave generous slices of fresh black truffle over the egg.

Finish with:

  • micro herbs

  • finely chopped chives

  • freshly cracked black pepper

  • a few drops of premium alpine olive oil

Leave generous negative space for an elegant presentation.

  • Always use authentic Fontina DOP from Valle d'Aosta.

  • Melt the cheese slowly to prevent it from separating.

  • Add the egg yolks only after the cheese has melted completely.

  • The poached egg should have a perfectly runny yolk.

  • Shave the truffle at the last moment to preserve its aroma.
