Chef Gianluca Deiana Abis: Pasta Con Sardine Fresche/ Pasta with Fresh Sardines

1 package of pasta on your choice 300 g of fresh sardines

1 cup fresh cherry tomatoes 4 tablespoons of extra virgin olive oil half a glass of dry white wine a spoonful of chopped parsley a clove of garlic salt and pepper qb


Clean and fillet the sardines, removing the central bone, the tail and the head, then rinse and dry them by dabbing them gently. Cut the fillets into pieces, keeping few of them for decoration. In a saucepan, bring plenty of salted water to the boil and cook pasta until al dente. In the meantime, prepare the dressing. In a saucepan, heat the oil with garlic; when it starts to sizzle, remove the garlic and brown the sardines until golden brown. Remove few whole fillets and set them aside for decoration, then pour the wine over the remaining sardines and let them evaporate. Add cherry tomatoes and season with salt and pepper, and cook for about 10 minutes, then turn off the heat and sprinkle with the chopped parsley. When pasta is cooked, transfer it to the sardine with a good splash of cooking water; sauté over a high flame and transfer to a serving dish, decorating with the sardine fillets kept aside.
