Often considered the ancestor of both Carbonara and Amatriciana, Gricia is a masterpiece of Roman cuisine. Made with guanciale, Pecorino Romano, black pepper, and fresh pasta, this dish demonstrates how authentic Italian cooking relies on technique, balance, and exceptional ingredients.
