Italian lentil soup is a simple, deeply savory preparation built on soffritto, tomatoes, herbs, and lentils cooked until tender but still distinct. The broth should be naturally thickened by the legumes, never floury or heavy, and the vegetables should remain identifiable.

Ingredients

2 tbsp extra virgin olive oil 1 small onion, finely diced 1 carrot, finely diced 1 celery stalk, finely diced 2 garlic cloves, minced 1 tbsp tomato paste 1 1/2 cups brown or green lentils, rinsed 1 cup crushed tomatoes 6 cups low sodium vegetable stock 1 bay leaf 1 rosemary sprig 1/2 tsp kosher salt 1/4 tsp black pepper 2 tbsp chopped Italian parsley Extra virgin olive oil for finishing Parmigiano Reggiano, optional

Preparation

1. Warm olive oil in a heavy pot over medium low heat. Add onion, carrot, and celery with a pinch of salt and cook 8 to 10 minutes without browning. 2. Add garlic and tomato paste and cook 1 minute. 3. Add lentils, crushed tomatoes, stock, bay leaf, rosemary, salt, and pepper. Bring to a boil, then immediately lower to a gentle simmer. 4. Partially cover and cook 35 to 45 minutes, stirring occasionally, until lentils are tender but still hold their shape. Add hot stock or water if necessary. 5. Remove herbs. Lightly crush one ladle of lentils against the side of the pot and stir them back in to thicken the soup naturally. 6. Adjust seasoning, stir in parsley, and finish with extra virgin olive oil.

Professional Technique

Cook lentils at a gentle simmer and season progressively. Acidic ingredients can slightly slow softening, so use ripe tomatoes and avoid excessive acidity early in the cook. Crushing a small portion thickens the soup without flour or cream.

Chef Tips

Brown or green lentils hold their shape better than red lentils. Rinse and pick them over carefully. Keep hot stock nearby to manage consistency because different lentils absorb different amounts of liquid.

Common Mistakes

Do not boil aggressively, salt heavily at the beginning, or cook until every lentil breaks apart. Avoid adding baking soda; it damages flavor and texture. Do not make the soup too thick because it continues to tighten as it rests.

Wine Pairing

Montepulciano d’Abruzzo matches the earthy lentils and tomato. Chianti Classico adds acidity and savory herbs. Barbera d’Asti is bright and refreshing. Cerasuolo d’Abruzzo works as a fuller rosato option. Verdicchio is an excellent white pairing when the soup is lighter and finished with olive oil rather than cheese.

Storage and Reheating

Refrigerate up to 4 days. Reheat gently with a splash of stock or water. Freeze up to 3 months; thaw overnight and adjust seasoning after reheating.
