Story of the Dish
Few dishes represent the spirit of Venice better than polpetti alla Veneziana. In the Venetian dialect, folpetti refers to small octopus or baby octopus, a delicacy sold every morning at the historic Rialto Fish Market, where fishermen from the Venetian Lagoon have brought their catch for nearly a thousand years.
Traditionally, the octopus is slowly simmered until perfectly tender, then dressed simply with exceptional olive oil, fresh parsley, garlic, lemon, and a touch of sea salt. This minimalist preparation reflects the philosophy of Venetian cuisine: allowing the quality of the seafood to shine without unnecessary complexity.
Throughout Venice, the dish is commonly served as a cicchetto, the city's famous small bite enjoyed with a glass of wine (ombra). While rustic in origin, modern Michelin-starred restaurants have elevated this classic through elegant plating and impeccable technique, proving that simplicity executed perfectly is the highest form of refinement.
Ingredients
For the Octopus
2½ lb baby octopus (or small octopus), cleaned
1 lemon, halved
2 bay leaves
1 celery stalk
1 small onion
8 black peppercorns
Venetian Dressing
⅓ cup premium extra virgin olive oil
2 tbsp fresh lemon juice
2 garlic cloves, finely grated
¼ cup finely chopped Italian parsley
1 tsp lemon zest
Flaky sea salt
Freshly cracked black pepper

Micro parsley
Lemon supremes
Thinly sliced celery hearts
Lemon olive oil
Fresh cracked pepper
Preparation
Step 1 – Cook the Baby Octopus
Fill a large pot with water.
Add:
onion
celery
lemon
bay leaves
peppercorns
Bring to a gentle simmer.
Dip each octopus into the water three times to naturally curl the tentacles.
Submerge completely.
Cook gently for 35–45 minutes, depending on size.
The octopus should be tender but still hold its shape.
Allow it to cool in its cooking liquid for about 15 minutes.
Drain and pat dry.
Step 2 – Prepare the Dressing
Whisk together:
olive oil
lemon juice
garlic
parsley
lemon zest
salt
pepper
Allow the dressing to infuse for 10 minutes.
Step 3 – Marinate
Place the warm octopus into a bowl.
Pour the dressing over the seafood.
Gently toss until evenly coated.
Allow to marinate for 20 minutes.
Step 4 – Final Seasoning
Taste.
Adjust with additional lemon juice, olive oil, or sea salt if needed.
The dressing should be bright and fresh without overwhelming the sweetness of the octopus.
Step 5 – Plate
Arrange the baby octopus naturally with elegant height.
Scatter a few celery heart slices and lemon supremes around the plate.
Finish with micro parsley, flaky sea salt, freshly cracked black pepper, and a drizzle of lemon-infused olive oil.

Never boil the octopus aggressively—gentle simmering keeps it tender.
Cooling the octopus in its cooking liquid prevents it from drying out.
Dress the octopus while still warm so it absorbs the vinaigrette.
Use only the highest quality extra virgin olive oil; it is the star of the dish.
