Wine Pairing: Brachetto d’Acqui DOCG

Brachetto d’Acqui DOCG is one of Italy’s most distinctive aromatic sweet red wines, a Piedmontese specialty known for fragrant red-berry aromas, delicate sparkle, and naturally moderate alcohol.

Produced primarily in the hills around Acqui Terme in the province of Alessandria, it occupies a rare position: sweet, red, aromatic, and refreshing at the same time. Unlike sweet wines that rely on richness alone, Brachetto d’Acqui is defined by perfume, freshness, and lightness. Its natural sweetness is balanced by bright acidity and gentle effervescence.

History and Territory

The wine takes its name from the Brachetto grape and the town of Acqui Terme. The denomination received DOCG recognition in 1996 and covers a historic growing area across southeastern Piedmont.

Vineyards are planted on rolling hills with soils that can include clay, limestone, marl, and sand. The combination of hillside exposure and local climate helps the grape retain the fresh red-fruit and floral aromas that define the denomination.

The Brachetto Grape and DOCG Styles

The production rules require 97–100% Brachetto, with a small allowance for other permitted red grape varieties. The denomination includes red and lightly sparkling Brachetto d’Acqui, fully sparkling versions, and Passito.

Most familiar examples are sweet and sparkling, usually finishing around 5.5–7% alcohol by volume. Fermentation takes place in a pressurized tank and is stopped before all the grape sugar is converted into alcohol. This preserves sweetness, vivid fruit, and the wine’s fine bead.

Brachetto’s natural color and perfume set it apart from white aromatic dessert wines. Its identity is built around strawberry, raspberry, red cherry, rose, violet, and subtle spice.

Tasting Profile

Appearance

Bright ruby to translucent garnet-red, often with purple reflections and a lively pink or ruby mousse in sparkling examples.

Aromas

  • Wild strawberry

  • Raspberry

  • Red cherry

  • Rose petal

  • Violet

  • Red currant

  • Sweet spice

  • Fresh grape

Palate

Sweet, soft, and gently sparkling, with fresh red fruit, moderate acidity, and a light finish. The most balanced wines retain clarity and fragrance without becoming syrupy.

Serving Temperature and Glassware

Serve Brachetto d’Acqui DOCG at 43–46°F or 6–8°C.

Use a tulip-shaped sparkling-wine glass or a small white-wine glass. A very narrow flute can preserve bubbles, but a slightly broader tulip better reveals the wine’s rose and berry aromas. Serve chilled and drink while the perfume and effervescence are at their freshest.

Food Pairing

Brachetto d’Acqui works best with desserts and savory dishes that share or contrast its berry fragrance. The dish should not be substantially sweeter than the wine.

  • Strawberries, raspberries, and red-fruit tarts

  • Pear desserts with hazelnut or almond

  • Hazelnut praline and gianduia

  • Milk chocolate and moderately dark chocolate

  • Ricotta, mascarpone, and fresh cream

  • Fruit salad and delicate pastries

  • Prosciutto and fruit

  • Mildly spicy dishes and selected sushi preparations

With pear and toasted hazelnut, Brachetto provides contrast. Rose and red-berry aromas lift the fruit, while the wine’s sweetness softens roasted nut and praline flavors. Very bitter chocolate can make the wine seem thin, so chocolate pairings should remain creamy and moderate in cacao intensity.

Zafferano & Co. Recipes to Pair with Brachetto d’Acqui DOCG

Pear and amaretti connect with Brachetto’s floral sweetness, while dark chocolate creates contrast with its rose and red-berry aromas.

Roasted pear and mascarpone match the wine’s soft texture; toasted Piedmont hazelnuts add a regional bridge without masking its fragrance.

Gianduia and hazelnut are classic partners for an aromatic sweet red. Brachetto’s acidity and bubbles keep the cake from feeling dense.

The cold, creamy ricotta base and honey are refreshed by the wine’s gentle sparkle, while hazelnut complements its red-fruit perfume.

The crisp hazelnut confection needs sweetness and freshness. Brachetto supplies both, with berry and rose notes creating a vivid aromatic contrast.
