Wine Pairing: Cagliari DOC

Cagliari DOC is one of Sardinia’s most varied wine denominations. Rather than identifying a single grape or style, it brings together white, red, sparkling, and sweet wines based on four varieties deeply connected to the island: Malvasia di Sardegna, Monica, Moscato Bianco, and Vermentino.
Denomination Overview
Cagliari DOC was established in 2011. Its production area extends across southern and central-western Sardinia, including the Campidano plain, the territory surrounding Cagliari, and parts of the Oristano area.
The denomination covers landscapes shaped by granite, limestone, volcanic formations, alluvial plains, and coastal soils. Warm Mediterranean conditions, limited rainfall, sea breezes, and strong sunlight encourage aromatic ripeness while helping the grapes retain their distinctive Sardinian character.
Grapes and Official Styles
Each varietal wine must contain at least 85% of the grape named on the label.
The official styles are:
Cagliari Malvasia
Cagliari Malvasia Spumante
Cagliari Malvasia Riserva
Cagliari Monica
Cagliari Monica Riserva
Cagliari Moscato
Cagliari Vermentino
Cagliari Vermentino Superiore
Malvasia Riserva requires at least 12 months of aging beginning November 1 following the harvest. Monica Riserva requires at least 24 months.
Tasting Notes
Cagliari Vermentino and Vermentino Superiore
Cagliari Vermentino is typically straw yellow with green reflections. The aromatic profile can include citrus, white flowers, fresh Mediterranean herbs, and orchard fruit.
The palate is fresh and savory, often closing with the lightly bitter note associated with Vermentino. The Superiore style offers greater concentration, alcohol, and persistence while preserving the grape’s freshness.
Cagliari Malvasia, Spumante, and Riserva
Cagliari Malvasia ranges from straw yellow to gold. Its aromas can move from delicate flowers and ripe fruit toward honey, sweet herbs, and toasted almond.
Malvasia Spumante adds fine bubbles and a lighter, fruit-driven character. Malvasia Riserva is deeper in color and more evolved, with a softer texture and greater aromatic persistence.
Cagliari Monica and Monica Riserva
Cagliari Monica has a pale ruby color that can develop orange reflections with age. It is an elegant Sardinian red with delicate red-fruit, floral, and Mediterranean herbal notes.
The palate can range from dry to sweet. Monica Riserva is fuller and more evolved, with a softer, velvety texture suited to richer meat preparations.
Cagliari Moscato
Cagliari Moscato is golden, intensely aromatic, and sweet. Honey, ripe fruit, sweet spice, and citrus notes are balanced by enough freshness to accompany desserts without becoming excessively heavy.

Wine Pairing
Cagliari Vermentino and Vermentino Superiore
Fregola ai Frutti di Mare e Bottarga — Vermentino’s freshness and savory finish balance the shellfish, toasted fregola, and concentrated marine flavor of bottarga.
Grilled Octopus with Wild Fennel and Bottarga — Citrus, herbs, and salinity connect naturally with grilled octopus, wild fennel, and bottarga.
Cagliari Monica and Monica Riserva
Malloreddus alla Campidanese — Monica’s red fruit, freshness, and restrained tannins complement sausage, tomato, saffron, and Pecorino Sardo.
Spezzatino di Agnello alla Sarda con Carciofi — Monica Riserva has enough structure for lamb, while its Mediterranean character follows the herbal quality of the artichokes.
Cagliari Malvasia and Moscato
Seadas Sarde — Sweet Malvasia or Moscato balances the honey while its aromatic freshness contrasts with the warm cheese filling.
Caschettas Sarde alle Mandorle, Miele e Zafferano — Malvasia Riserva connects with toasted almond and honey, while Moscato supports the dessert’s citrus and saffron aromas.
