Finish with parsley, lemon zest, cold butter and extra virgin olive oil.
Preparation
Clean the artichokes, quarter them and hold briefly in lemon water. Pat the lamb dry, season and sear in batches until deeply golden. Remove it, cook the soffritto, add garlic and deglaze with white wine. Reduce by half, return the lamb, add stock and herbs and braise at 300°F for 50 to 60 minutes. Separately sauté the artichokes, add wine and stock, cover and cook until about three-quarters tender. Add them to the nearly tender lamb and cook uncovered another 15 to 20 minutes.
