Wine Pairing: Campidano di Terralba o Terralba DOC


Campidano di Terralba o Terralba DOC is a red-wine denomination from central-western Sardinia built around Bovale. The wines combine ripe red fruit, savory character, Mediterranean herbs, freshness, and firm tannins, making them particularly suited to sausage, slow-cooked meat, game, roast pork, and aged cheeses.


Denomination Overview


The denomination was officially recognized in 1975. Its production area extends across designated municipalities in the provinces of Oristano and Medio Campidano, from Alta Marmilla through the Campidano plain and toward the Arburese area.


The denomination produces three red-wine styles:

  • Campidano di Terralba or Terralba Bovale

  • Campidano di Terralba or Terralba Bovale Superiore

  • Campidano di Terralba or Terralba Bovale Riserva


Grapes


The wines must contain at least 85% Bovale, using Bovale Sardo—locally known as Bovaleddu—and/or Bovale Grande, also known as Bovale di Spagna.


Up to 15% may come from other black grape varieties authorized for cultivation in Sardinia.


Bovale gives the wines their distinctive combination of color, ripe fruit, tannic structure, savory depth, and freshness.


Territory and Wine Style


The production zone is characterized by a warm Mediterranean climate. In important sectors around Terralba and Mogoro, Bovale is cultivated in sandy and sandy-clay soils, with the Maestrale helping moderate the summer heat.


These conditions allow the grapes to reach full maturity while retaining enough acidity to balance their concentration and tannins.


Campidano di Terralba or Terralba is always dry and red. The standard Bovale style can be released after March 31 following the harvest. The Riserva must age for at least two years beginning on November 1 of the harvest year.


The production rules do not require a specific type of oak aging. Individual producers may therefore emphasize fresh fruit through stainless-steel maturation or develop more structured expressions through longer cellar aging.


Tasting Notes


Campidano di Terralba or Terralba Bovale


The standard wine ranges from light to deeper ruby red. Its aroma is intense, with typical expressions showing ripe cherry, strawberry, raspberry, dried herbs, and Mediterranean scrub.


The palate is dry, full, and savory, with noticeable but approachable tannins and sufficient acidity to maintain freshness. The minimum alcohol level is 12%.


Bovale Superiore


The Superiore has an intense ruby color and a minimum alcohol level of 13%. It generally offers greater body and concentration, with ripe cherry, blackberry, Mediterranean herbs, balsamic nuances, cocoa, and spice.


Its stronger tannic structure makes it suitable for roasted meat, game, aged Pecorino, and rich pasta sauces.


Bovale Riserva


The Riserva has an intense ruby color, a minimum alcohol level of 12.5%, and at least two years of mandatory aging.


The additional maturation gives the wine more integrated tannins and deeper savory complexity. Depending on the producer and aging method, the wine may develop balsamic, earthy, tobacco, cocoa, and dried-fruit nuances.


Serving Temperature and Glassware


Serve the standard Bovale at 61–64°F / 16–18°C in a medium-sized red-wine glass.


Serve Superiore and Riserva at approximately 64°F / 18°C in a larger Bordeaux-style glass. Young, structured bottles can benefit from 30 to 60 minutes in a decanter.


Avoid serving the wine too warm, as excessive temperature can emphasize alcohol and reduce its natural freshness.


Wine Pairing



The sausage, tomato, saffron, and Pecorino create a natural territorial pairing. Bovale’s acidity supports the tomato, while its tannins and savory character balance the sausage and cheese.



The wine’s herbal and savory profile complements the lamb and artichokes. Choose a balanced standard Bovale with controlled tannins or a mature Superiore.



A Superiore or Riserva has the structure needed for the richness of the pork. Its acidity cuts through the fat, while balsamic and Mediterranean-herb notes connect with the myrtle glaze and smoky potato.



Wild boar requires a wine with tannin, concentration, and savory persistence. A Terralba Riserva matches the depth of the ragù, while its cocoa and spice nuances echo the dark chocolate.



The richness of veal, marrow, and slow-cooked sauce benefits from the freshness and tannic structure of Bovale Superiore. The wine’s savory character also works naturally with toasted fregola and saffron.
