Ingredients

For the Pastry

  • 1 3/4 cups all-purpose flour

  • 3 tbsp unsalted butter or lard, softened

  • 1 large egg

  • 3 tbsp warm water, approximately

  • 1 tbsp granulated sugar

  • 1 tsp finely grated lemon zest

  • Pinch of fine sea salt

For the Almond Filling

  • 1 1/2 cups finely ground blanched almonds

  • 1/3 cup granulated sugar

  • 3 tbsp high-quality honey

  • 1 large egg white

  • 1 tsp finely grated lemon zest

  • 1/2 tsp finely grated orange zest

  • 1 small pinch saffron threads

  • 1 tbsp warm water

  • Pinch of fine sea salt

For the Saffron Mascarpone Cream

  • 4 oz mascarpone

  • 1/3 cup heavy cream

  • 1 1/2 tbsp powdered sugar

  • 1 small pinch saffron threads

  • 1 tbsp warm heavy cream

  • 1/2 tsp finely grated lemon zest

Preparation

1. Prepare the Saffron

Steep saffron threads in warm water for approximately 10 minutes.

2. Prepare the Pastry

Combine flour, sugar, lemon zest, and salt. Work in butter or lard, add egg, then enough warm water to make a smooth, firm dough. Rest 30 minutes.

3. Prepare the Filling

Mix almonds, sugar, citrus zest, honey, egg white, saffron infusion, and salt until a soft but firm almond paste forms.

4. Shape and Bake

Roll dough approximately 1/16 inch thick and cut into narrow strips. Place filling along the center, lift the sides, and pinch decoratively while leaving the filling partially visible. Bake at 340°F for 15 to 20 minutes, keeping the pastry pale. Plate with saffron mascarpone cream, honey reduction, almond praline, and citrus zest.

Roll the pastry extremely thin. The filling should be moist but firm. Infuse saffron before use rather than adding it dry. Do not overbake; the shell should remain pale and crisp while the center stays tender.
