Tiramisu Recipe by Master Chef Gianluca Deiana Abis

Tiramisu is a classic Italian dessert that combines layers of coffee-soaked ladyfingers with a rich mascarpone cream filling. Master Chef Gianluca Deiana Abis’s recipe brings a unique balance of flavors and textures, making this dessert an unforgettable experience.

Ingredients:

  • For the cream layer:

    • 500g mascarpone cheese (room temperature)

    • 4 large egg yolks

    • 100g granulated sugar

    • 300ml heavy cream

    • 1 teaspoon vanilla extract

    • Pinch of salt

  • For the soaking mixture:

    • 300ml freshly brewed strong coffee (preferably espresso)

    • 50ml dark rum or Marsala wine (optional)

    • 1 tablespoon cocoa powder (for dusting)

  • For the ladyfingers:

    • 250g ladyfingers (savoiardi biscuits)

Instructions:

  1. Prepare the coffee mixture:

    • Brew the coffee and let it cool to room temperature.

    • If desired, mix in the dark rum or Marsala wine to the coffee for added depth of flavor.

  2. Prepare the mascarpone cream:

    • In a large mixing bowl, whisk the egg yolks and sugar together until smooth and creamy, forming a pale yellow mixture.

    • In another bowl, whip the heavy cream with a pinch of salt until soft peaks form.

    • Carefully fold the mascarpone cheese into the egg yolk mixture until smooth and combined.

    • Gently fold the whipped cream into the mascarpone mixture, ensuring everything is evenly incorporated.

  3. Assemble the tiramisu:

    • Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them completely (just a quick dip to avoid sogginess).

    • Arrange the dipped ladyfingers at the bottom of a 9x9-inch or similar-sized serving dish.

    • Spread half of the mascarpone cream over the first layer of ladyfingers, smoothing it out evenly.

    • Repeat the process by dipping the remaining ladyfingers into the coffee mixture and layering them over the cream.

    • Spread the remaining mascarpone cream over the top layer of ladyfingers.

  4. Chill the tiramisu:

    • Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, or preferably overnight. This allows the flavors to meld together beautifully and the dessert to set.

  5. Serve and garnish:

    • Just before serving, dust the top of the tiramisu with a light layer of cocoa powder using a fine sieve.

    • Optionally, garnish with shaved chocolate or chocolate curls for an added touch of indulgence.

Chef’s Tip by Master Chef Gianluca Deiana Abis:

For an authentic taste, be sure to use high-quality mascarpone and espresso. The key to a perfect tiramisu is the balance between the rich cream and the bold coffee flavors. Always allow your tiramisu to set for several hours for the best texture.

Enjoy:

This tiramisu, created with love and passion by Master Chef Gianluca Deiana Abis, is the ultimate treat that brings together the creamy, coffee-infused goodness of Italian culinary tradition. Perfect for any occasion, it’s guaranteed to impress.
