The vegan method changes the structural ingredients but keeps the defining architecture: two filled choux sizes, matching glaze, and a clean buttercream join.

Ingredients


Main Components

  • Water — 1/2 cup (120 ml)

  • Unsweetened soy milk — 1/2 cup (120 ml)

Preparation


Step 1

Bring water, soy milk, butter, sugar, and salt to a full boil. Add flour at once and cook the paste 2 to 3 minutes, until a film forms on the pan.

Step 2

Cool the paste 8 minutes. Beat in reduced aquafaba gradually, stopping when the paste falls from the paddle in a thick V. Fold in baking powder.

Step 3

Pipe twelve large 2-inch (5 cm) rounds and twelve small 1-inch (2.5 cm) rounds. Smooth peaks with a damp fingertip.

Step 4

Bake at 400°F (205°C) for 15 minutes, reduce to 350°F (177°C), and bake until deeply golden and dry: 20 to 25 minutes more for large puffs, less for small.

Step 5

Cook soy milk, sugar, and cornstarch to a full boil, pour over 5 ounces (140 g) chocolate, and blend smooth. Chill under contact film, then pipe into cooled puffs.

Step 6

Glaze both sizes with ganache made from remaining chocolate and hot coconut cream. Set one small puff on each large puff and pipe a narrow buttercream collar.

Final Plating and Presentation


Center one assembled religieuse on a dark plate and show one cut puff separately to reveal the filling.


Keep the ganache edge clean and the collar narrow; excess decoration distorts the classic silhouette.
