Torta Paradiso is the cake of Pavia and it is built on a single arithmetical idea. Butter, sugar, egg and starchy flour go in at the same weight, and half of that flour weight is not flour at all but potato starch. Nothing else is permitted except lemon zest, vanilla, a pinch of salt and a heavy veil of confectioners sugar on top. There is no baking powder, no syrup, no filling and no glaze, which means there is also nowhere for a weak technique to hide.

What the formula buys is a crumb that behaves unlike any other butter cake. Potato starch carries no gluten forming protein, so replacing half the wheat with it leaves the structure deliberately short. The cake gelatinises, sets, and then gives way on the tongue almost instantly instead of chewing. The lift comes entirely from air beaten into cold butter and from four whites folded in at soft peak, which is why the temperature of the butter and the length of the creaming matter more here than any ingredient you could add.

Everything in this recipe is therefore a question of control. The butter sits at one temperature and one only. The creaming runs long. The folding stops the second the last streak of flour disappears. The bake is gentle so the crust stays the colour of shortbread rather than browning, and the sugar goes on within the half hour before the cake reaches the table, never earlier.

The Story


Pavia prefers to tell this as a legend about a nun. A Cistercian sister of the Certosa di Pavia, the story runs, gave a small crumbly cake to a passing nobleman, who tasted it and said it was a piece of paradise. It is a good story and it explains the name, but the documented history is more useful to a baker. In 1878 a pastry chef named Enrico Vigoni opened a shop on Strada Nuova, directly opposite the university, and began selling a pale butter cake of his own devising. The Pasticceria Vigoni is still there and still sells it, and the cake spread from that counter across Lombardy.

Vigoni did not invent a flavour. He invented a proportion. Equal weights of butter, sugar, egg and starchy flour, with half of that last figure given over to potato starch, is an unusual thing to arrive at in the late nineteenth century, when the French genoise was the reference point for every fine cake in Europe. Pavia sits in the rice and starch country of the lower Po, where potato and rice starch were cheap, locally milled and familiar, and the substitution reads as a Lombard answer to a French problem: how to get lightness without a whipped whole egg foam and without the chew that wheat brings.

The restraint is the other half of the invention. A cake this rich invites additions, and Torta Paradiso refuses all of them. Lemon zest and vanilla are the only aromatics the classic version admits, and it is finished with confectioners sugar alone, laid on thickly enough that the whole surface reads as white. Pavia sometimes calls it the cake that wears a habit, which ties the legend to the appearance neatly. Modern pasticcerie in the city will split it and fill it with pastry cream or mascarpone for a celebration, but the original is judged on one thing only, and that is the fineness of the crumb.


Ingredients


For the cake

  • Unsalted butter, 82 to 84 percent fat, 14 tbsp (200 g), at 65°F (18°C)

  • Superfine sugar, 1 cup (200 g)

  • Large eggs, separated, 4, at 68°F (20°C)

  • Large egg yolks, extra, 2, at 68°F (20°C)

  • Cake flour, 3/4 cup plus 2 tbsp (100 g)

  • Potato starch, 3/4 cup (100 g)

  • Unwaxed lemon, the finely grated zest of 1

  • Pure vanilla extract, 1 tsp (5 ml), or the seeds of 1/2 vanilla bean

  • Fine sea salt, 1/4 tsp (1.5 g)

For the pan

  • Softened butter, 1 tbsp (14 g)

  • Cake flour for dusting, 2 tbsp (16 g)

  • Parchment round cut to fit a 9 inch (23 cm) pan, 1

For finishing

  • Confectioners sugar, 1/3 cup (40 g)

  • Unsweetened whipped cream, 1/2 cup (120 ml), optional, for serving


Preparation


Heat the oven and prepare the pan

Set a rack in the lower third of the oven and bring it to 340°F (170°C) conventional. On convection drop to 320°F (160°C) and expect the cake to be ready about five minutes early. This is a gentle bake by design: a hot oven colours the surface long before the centre has set and takes away the pale ivory look the cake is named for. Butter a 9 inch (23 cm) springform generously, working the butter up the sides with a pastry brush, line the base with the parchment round and butter that too. Dust the whole interior with cake flour, rotate the pan until it is evenly coated, then invert it over the sink and tap out every loose speck. Flour left sitting in the corners bakes into a grey seam along the bottom edge.


Sift the flour and the potato starch three times

Combine the cake flour, the potato starch and the fine sea salt and sift all three together onto a sheet of parchment, then sift twice more. This is not fussiness. Potato starch is dense and hygroscopic and it packs into small hard pearls that survive folding intact and bake into chalky pockets you will find in the slice. Three passes are what it takes to disperse it evenly through the much lighter wheat flour and to aerate the mixture at the same time. Leave it sitting on the parchment when you are done so that you can shower it over the batter later rather than tipping it in as a lump.


Perfume the sugar with the lemon zest

Grate the zest of the lemon directly onto the superfine sugar, taking only the yellow and none of the white pith beneath it, then rub the two together between your fingertips for about a minute. The sugar crystals act as an abrasive and rupture the oil cells in the zest, releasing far more aroma than grating alone ever does. You are finished when the sugar is faintly damp, tinted pale yellow and smells strongly of lemon oil from an arm's length away. Rubbing the zest into the sugar rather than adding it to the finished batter is the difference between a cake that is fragrant and one that merely contains lemon.


Cream the butter and the lemon sugar to a near white ribbon

The butter has to be at 65°F (18°C). At that temperature a finger leaves a clean dent and the dent holds its edge, and the surface stays matte rather than shiny. Butter that looks greasy has already begun to melt and will never hold air again. Beat it alone with the paddle on medium for two minutes to smooth it out, then add the lemon sugar in three additions and cream for 8 to 10 minutes on medium high, stopping every two minutes to scrape down the bowl and the paddle itself. Judge it by colour and not by the clock. The mixture begins pale yellow and grainy and finishes almost white, visibly larger, falling off the paddle in soft ribbons. This aeration is the only leavening the cake has.


Add the six yolks one at a time

Add the yolks, the four from the separated eggs plus the two extra, one at a time, allowing each to disappear completely before the next goes in, which takes roughly thirty seconds apiece. Yolks added quickly, or added cold, will break the emulsion: the batter goes shiny, slack and visibly curdled. If that happens, stop immediately, add a tablespoon of the sifted flour mixture and beat for thirty seconds, and it will usually come back. Beat in the vanilla last. The finished base should be the colour of clotted cream and hold a soft peak on the lifted paddle.


Whip the whites to soft peaks

In a scrupulously clean bowl, whip the four egg whites with the whisk attachment on medium until they turn opaque and foamy, then raise the speed and take them just to soft peak, where the tip curls over as the whisk is lifted rather than standing upright. Wipe the bowl and the whisk with a little lemon juice and dry them first, because any trace of fat from the yolks or the butter will keep the whites from taking air at all. Stiff whites are the classic failure here. They are dry and granular, they shear rather than fold into a heavy butter base, and they leave white streaks and coarse tunnels through the crumb.


Fold the whites and the dry mixture in alternating additions

Fold about a third of the whites into the butter and yolk base with a large flexible spatula, working freely and without any particular care. This first addition is sacrificial and its only job is to slacken the dense base so the rest can go in gently. Now alternate. Shower a third of the flour and starch mixture over the surface and fold by cutting the spatula down through the centre, sweeping along the bottom of the bowl and turning the batter over itself, rotating the bowl a quarter turn with every stroke. Add half the remaining whites, fold, then another third of the dry, then the last of the whites, then the last of the dry. Around forty deliberate strokes in total is the whole operation. Stop the instant the last streak of flour vanishes.


Fill the pan and level the batter

The finished batter is thick, pale and only just pourable, and it should mound briefly on the spatula before slumping back. Scrape it into the prepared pan with a bowl scraper rather than pouring, level the top with a small offset spatula, and rap the pan once, firmly, on the counter to release the few large bubbles trapped during folding. Hold the depth at about 1 1/2 inches (4 cm). If you scale the recipe, weigh the batter into the pan rather than judging by eye, because a deeper cake needs a lower oven and a longer bake, and the outside will dry out before the middle sets.


Bake at 340°F (170°C) for 40 to 45 minutes

Do not open the oven door for the first 30 minutes. The structure at that stage is held up almost entirely by expanding air and steam, and a draught will drop the centre in a way no amount of sugar on top will disguise. The cake is ready when the top is an even pale gold, the colour of shortbread and never mahogany, the surface carries a fine matte crackle, the edges have just pulled away from the sides of the pan, and the centre springs back without holding a dent under a fingertip. A skewer in the middle should come out with a few dry crumbs on it and an instant read thermometer should register 205°F to 208°F (96°C to 98°C). If the top is colouring too fast at the halfway mark, lay a sheet of foil loosely over the pan. Err towards pulling it a minute early.


Cool in the pan, then on a rack, and rest overnight

Set the pan on a wire rack and leave it alone for 15 minutes. Straight from the oven the crumb is extremely fragile, because the starch has gelatinised but has not yet retrograded, and the cake will tear if you move it now. After 15 minutes release the collar, slide a thin knife under the parchment and lift the cake onto the rack. Peel the parchment away while the base is still warm, since paper left in place fuses to the crust and takes the bottom of the cake with it. Cool completely, right side up, for at least two hours. Then wrap the undusted cake in a clean cloth or slip it into a tin and leave it at room temperature for 12 hours if you can. The butter firms, the lemon oil migrates through the crumb, and the slice cuts noticeably cleaner on the second day.


Plating


The assembly of a Torta Paradiso is one gesture and one only, and it happens within the half hour before the cake reaches the table. Sit the cooled cake on a serving plate or a cake board. Load the confectioners sugar into a fine mesh tea strainer and tap the rim of the strainer rather than shaking it, moving in slow overlapping passes from a height of about 12 inches (30 cm) so the sugar falls as a drift rather than landing in stripes. Pavia lays it on thickly enough that the cake reads as pure white and the sugar sits proud of the surface. A thin dusting looks apologetic and vanishes within the hour.

For the classic Vigoni finish, cut a paper disc slightly smaller than the cake and rest it in the centre before dusting, which leaves a defined sugar border around the edge. A paper doily laid over the top gives a lace pattern, but it has to be lifted straight up and never dragged sideways. Whichever you choose, do not dust in advance. The cake will pull moisture into the sugar and turn it translucent and grey, and adding a second layer on top of a wet first layer only makes it worse.

Serve at 68°F (20°C). Cut with a long thin bladed knife using a single decisive downward stroke rather than a sawing motion, and wipe the blade between every cut, because this crumb is short and it will smear sugar across the face of the next slice. Ten wedges from a 9 inch cake gives the right proportion, tall and narrow and pale with a crisp sugar line along the top edge. In Pavia it arrives on a plain white plate with nothing beside it and a small cup of espresso. If you want a dessert course around it, a spoonful of unsweetened whipped cream at the side of the plate is the limit. Anything sauced over the top soaks the crumb and defeats the whole point.


Professional Technique


The technical subject of this cake is mechanical aeration into a fat phase, and it is worth understanding why it behaves the way it does. Solid butter at 65°F (18°C) contains a crystal network that can trap air bubbles at the interface between fat and crystal. Beat sugar into it and the crystals act as tiny blades, cutting more and finer bubbles into the fat as they are dragged through it. Warm the butter past about 70°F (21°C) and that crystal network softens, the bubbles coalesce and escape, and no amount of further beating will put them back. This is the entire reason the temperature is specified to the degree rather than described as soft.

The second technique is the starch dilution, and the 100 g against 100 g is the number that defines the recipe. Cake flour is already low in protein, and replacing half of it with potato starch means half the flour weight contributes no gluten whatsoever. What the starch does instead is gelatinise during the bake and then set into a rigid, brittle matrix that fractures cleanly under the tooth. Shift the ratio towards wheat and you get a pound cake that chews. Push it much past parity towards starch and the crumb turns powdery and goes stale by the following morning, because there is not enough protein left to hold water in the structure.

The third is the alternating fold, which is doing two separate jobs at once. Whipped whites are a delicate foam that collapses under the weight of a dense butter base, and dry flour dumped onto a wet batter forms lumps that then need extra strokes to break up, which costs air. Alternating them means the batter is always slack enough to accept the next addition without heavy working, and the whites are never asked to carry the full weight of the base at once. The sacrificial first third is the hinge of the whole method: once the base has been lightened, every subsequent stroke can be gentle.


Texture and Moisture Control


There is no liquid in this formula beyond the eggs, which means moisture is governed almost entirely by the bake. Six yolks and four whites against 200 g of butter is a tight emulsion with very little free water in it, and an overbake of three minutes shows up immediately as dryness around the rim while the centre still tastes correct. This is why the thermometer is worth using. At 205°F to 208°F (96°C to 98°C) in the centre the starch has fully gelatinised and the egg proteins have set, and every additional minute past that point is moisture leaving through the crust.

The crumb changes measurably over the first day, and the change is favourable. Starch retrogradation begins as the cake cools and continues overnight, firming the gelatinised matrix and letting it release the knife cleanly instead of dragging. At the same time the butterfat recrystallises and the lemon oil, which is volatile and initially concentrated near the surface, redistributes through the interior. A cake sealed undusted in a tin at room temperature for 12 hours cuts better, smells stronger and tastes more evenly of lemon than the same cake cut two hours out of the oven.

Ambient humidity is the last variable and it acts on the finish rather than the crumb. Confectioners sugar contains cornstarch as an anticaking agent, but it will still draw water both from the air and from the cake beneath it, and once it does it goes translucent and dull. In a damp kitchen that can happen inside an hour. The practical rule is to store the cake undusted always, dust only what is going to the table, and never refrigerate, because below about 55°F (13°C) the butterfat crystallises hard, the crumb tightens into something waxy, and the lemon aroma is effectively switched off.


Professional Mise en Place


Once the creaming starts, this batter is on a clock. Whipped whites begin to weep within minutes and a batter left standing loses air steadily, so everything is measured, sifted and laid out before the mixer is switched on. Work through the list below in order and the whole operation runs without a pause.

Chef Tips


Use superfine sugar rather than standard granulated. The finer crystals dissolve into the butter during creaming instead of surviving into the bake, and the difference shows in the slice as a visibly finer crumb. If you only have granulated, pulse it in a food processor for 20 seconds and let the dust settle before you open the lid.

Buy a high fat European style butter at 82 to 84 percent. The extra fat and the correspondingly lower water content give a shorter crumb and a cleaner flavour, and in a cake with five real ingredients the butter is doing most of the tasting. Cheap butter carries more water, which turns to steam and coarsens the crumb.

Scrape the paddle itself and not just the bowl. A dense collar of unaerated butter hides inside the paddle throughout the creaming, and if it goes into the batter late, during folding, it shows up as a heavy sunken streak along the bottom of the baked cake. Stop the mixer, pull the paddle off and scrape it properly every two minutes.

For the taller traditional Pavia proportion, bake the same batter in an 8 inch (20 cm) pan for 50 to 55 minutes at 325°F (160°C). The slice is more dramatic and the crust to crumb ratio improves, but the lower oven temperature is not optional at that depth, because the outside will be dry before the centre reaches 205°F (96°C).


Common Mistakes


Softening the butter in the microwave. Even a few melted patches destroy the crystal network that holds air, and the cake comes out dense, greasy and sunken in the middle. There is no correction for it once the batter is mixed. Take the butter out early and check it with a probe instead.

Cutting the creaming short. Four minutes feels like plenty and it is not. Without 8 to 10 minutes of aeration there is simply not enough gas in the batter, and because the recipe contains no baking powder there is nothing whatsoever to compensate. Watch for the colour to go almost white before you stop.

Adding the yolks too fast or too cold. The emulsion splits, the batter goes shiny and slack and looks curdled, and the finished cake is heavy and slightly greasy. A tablespoon of the sifted flour mixture beaten in for thirty seconds will usually rescue it, but only if you catch it in the moment it happens.

Whipping the whites to stiff peaks. Overwhipped whites are dry and granular and cannot be folded into a heavy butter base without shearing. They leave white streaks through the crumb and coarse tunnels where the foam collapsed. Take them only to the point where the tip curls over.

Overfolding once the flour is in. Every stroke past the point where the last streak of flour disappears knocks out air and begins developing what little gluten is present, and potato starch offers no elasticity to forgive it. Count the strokes if you need to and stop at around forty.

Opening the oven in the first 30 minutes. The set is not yet established and the whole structure is held up by expanding air and steam, so the centre drops and stays dropped. If the top is browning too fast, wait until the halfway mark and then add the foil quickly.

Dusting the sugar while the cake is still warm. The residual moisture dissolves the sugar on contact and the finish turns into damp grey blotches within minutes. Cool completely, ideally overnight, and dust within the half hour before serving.

Refrigerating the finished cake. The butter hardens, the crumb tightens into something waxy and the lemon aroma disappears almost entirely, and a cake that has been chilled never fully recovers even after coming back to room temperature. Store it in a tin on the counter.


Wine Pairing


This cake is dry, buttery and only moderately sweet, so it wants lift rather than weight. A heavy syrupy wine flattens the lemon and leaves the crumb tasting of very little. Look for visible acidity, moderate residual sugar and a citrus or floral register that runs alongside the zest. Serve the whites and the sparkling wines at 46°F to 50°F (8°C to 10°C).

Oltrepò Pavese Metodo Classico DOCG: The local bottle in the most literal sense, grown in the hills of the same province as the cake and made from Pinot Nero by the traditional method. Its fine bead scrubs 200 g of butter off the palate between mouthfuls, and the bready autolytic note from lees ageing sits comfortably beside the pale toasted crust. Dry rather than sweet, which makes it a foil instead of a partner, and the best choice if the cake is dusted heavily.

Moscato d'Asti DOCG: Low in alcohol, gently frizzante and aromatic with peach and orange blossom, this runs straight alongside the lemon zest instead of competing with it. The residual sugar is modest enough not to bury a cake that is itself restrained in sweetness, and the light sparkle lifts the fat without adding any weight of its own. Pour it cold and pour it small.

Sangue di Giuda dell'Oltrepò Pavese DOC: The sweet frizzante red of the Pavia hills, and what a family in the province would actually open beside a homemade cake on a Sunday. Its strawberry and violet perfume supplies the fruit the recipe deliberately omits, the light tannin is almost undetectable, and the bubble keeps it from coating the mouth. Serve it at 54°F (12°C), cooler than instinct suggests.

Vin Santo del Chianti Classico DOC: A contrast rather than an echo, and the right answer for a drier slice on the second or third day. Long oxidative ageing in caratelli gives dried apricot, walnut and a faint bitterness on the finish that answers the toasted butter in the crust, while the underlying acidity stops the sugar from stacking up. Measure it carefully, because at a full glass it will simply outrun the lemon.


Storage & Reheating


Store the cake undusted, at room temperature, in an airtight tin or wrapped in a double layer of plastic. It keeps genuinely well for four to five days and is at its best on days two and three, once the butter has firmed and the crumb has settled. Dust only the portion going to the table. Never refrigerate it: below about 55°F (13°C) the butterfat crystallises hard, the crumb turns waxy and tight, and the lemon aroma is lost for good.

For longer storage, wrap the fully cooled undusted cake tightly in plastic, then in foil, and freeze it for up to two months. Whole cakes freeze better than slices because there is far less cut surface exposed to dry out. Thaw it still wrapped, at room temperature, over four to five hours. Unwrapping a frozen cake lets condensation form on the crust and leaves the surface tacky, which then ruins the dusting.

To refresh a thawed cake or a fourth day one, give it 6 to 8 minutes in a 300°F (150°C) oven, uncovered, then cool it completely again before dusting. Individual slices can be warmed for 90 seconds at the same temperature. Do not use a microwave, which drives water out of the starch and leaves the crumb tough within a minute of cooling. Stale ends are not waste: sliced thin, dried in a low oven until crisp and served with the same dessert wine, they stand in for biscotti perfectly well.

It is not free of gluten as written, although it adapts better than most cakes do, because half the flour weight is already gluten free potato starch and only the 100 g of cake flour needs replacing with a one to one blend.
