Cannonau di Sardegna
By Master Chef Gianluca Deiana Abis
1. HistoryCannonau di Sardegna is Sardinia’s signature red wine, crafted primarily from the Cannonau grape, believed to be closely related to Grenache. Its origins stretch back thousands of years, with archeological evidence suggesting that the grape has been cultivated on the island since the Nuragic era. Cannonau thrives in Sardinia’s rugged terrain, from its sun-drenched coastal plains to its mountainous interiors. The island’s warm Mediterranean climate, combined with its mineral-rich, well-drained soils, creates a wine that is deeply expressive of its terroir. Known for its bold flavors, rustic charm, and robust structure, Cannonau di Sardegna is a staple of Sardinian culture, often enjoyed alongside traditional local cuisine.
2. Pairing
Cannonau di Sardegna’s warm, ripe fruit, earthy undertones, and balanced acidity make it a versatile partner for many hearty Sardinian dishes.
Porceddu (Roast Suckling Pig): The wine’s rich fruit and smooth tannins complement the crispy, tender pork, creating a harmonious pairing.
Malloreddus alla Campidanese (Sardinian Gnocchetti with Sausage and Tomato Sauce): Cannonau’s herbal and spicy notes enhance the flavors of sausage, tomato, and saffron.
Lamb Stew with Rosemary: Its earthy character and firm structure stand up to the bold, savory flavors of slow-cooked lamb seasoned with herbs.
Pecorino Sardo (Aged or Young): The wine’s balance of acidity and fruit complements the salty, nutty complexity of Sardinian Pecorino.
Grilled Eggplant or Bell Peppers: Cannonau’s vibrant red fruit and gentle spice lift the smoky sweetness of grilled vegetables.
3. The Top Wineries
Cantina Santadi: One of Sardinia’s most respected wineries, known for producing Cannonau wines that are rich, balanced, and true to the island’s traditions.
Cantina di Calasetta: A smaller estate specializing in authentic Cannonau that reflects the character of southern Sardinia.
Sella & Mosca: A historic winery with a reputation for crafting elegant, age-worthy Cannonau, as well as experimenting with more refined, modern expressions of the variety.
4. The Notes of Master Chef Gianluca Deiana Abis
Cannonau di Sardegna is a wine that speaks to my Sardinian roots. Its bold character, earthy depth, and rich fruit reflect the island’s rugged beauty and ancient winemaking heritage. I love how it pairs effortlessly with traditional Sardinian fare, from slow-roasted meats to aged cheeses. For me, Cannonau represents more than just a wine—it’s a connection to the land, the culture, and the timeless traditions of my home. It’s a reminder that some of Italy’s most captivating wines come from its islands, where the flavors of sun, sea, and soil come together in a glass.
