Ingredients
1 1/2 lb Yukon Gold potatoes 1 cup cherry tomatoes, halved 1/3 cup pitted olives 2 tbsp capers, rinsed 1/4 red onion, thinly sliced 3 tbsp extra virgin olive oil 1 1/2 tbsp red wine vinegar 1/2 tsp kosher salt 1/4 tsp black pepper 2 tbsp parsley 1 tbsp oregano leaves
Preparation
1. Place potatoes in cold salted water and bring to a gentle simmer. Cook 15 to 20 minutes until tender but not breaking. 2. Drain and cool just enough to handle. Cut into 1 inch pieces while still warm. 3. Whisk olive oil, vinegar, salt, and pepper. Toss warm potatoes with half the dressing. 4. Add tomatoes, olives, capers, onion, parsley, oregano, and remaining dressing. Toss gently and rest 15 minutes before serving.
