These savory saffron crêpes are built around softness, sweetness and controlled dairy richness. The saffron is infused directly into the batter so its aroma runs through the structure of the dish. Sheep’s milk ricotta forms the heart of the filling, while slowly cooked leeks provide sweetness without turning the preparation heavy.

Ingredients

For the saffron crêpes

  • 1 cup all purpose flour (125 g)

  • 1 1/4 cups whole milk (300 ml)

  • 2 large eggs

  • 1 tbsp unsalted butter, melted (14 g)

  • 1 generous pinch saffron threads, about 1/8 tsp (0.15 g)

  • 2 tbsp hot milk (30 ml)

  • 1/4 tsp fine sea salt (1.5 g)

For the ricotta filling

  • 14 oz sheep’s milk ricotta (400 g)

  • 2 oz Parmigiano Reggiano, finely grated (55 g)

  • 1 large egg yolk

  • 1 tsp finely grated lemon zest

  • 1/4 tsp freshly grated nutmeg

  • Freshly ground white pepper

  • Fine sea salt

For the fondant leeks

  • 3 medium leeks, white and pale green parts only, about 14 oz (400 g)

  • 2 tbsp unsalted butter (28 g)

  • 1 tbsp extra virgin olive oil (15 ml)

  • 1/3 cup dry white wine (80 ml)

  • 1/2 cup light vegetable stock (120 ml)

  • Fine sea salt

  • Freshly ground black pepper

For the light Parmigiano sauce and finishing

  • 1 tbsp unsalted butter (14 g)

  • 1 tbsp all purpose flour (8 g)

  • 1 cup whole milk (240 ml)

  • 2 1/2 oz Parmigiano Reggiano (68 g)

  • Freshly grated nutmeg

  • Fresh chives

  • A few saffron threads

  • Freshly ground black pepper


Preparation

  1. Bloom saffron in 2 tbsp (30 ml) hot milk for 20 minutes.

  2. Whisk flour with eggs and milk gradually, then add saffron infusion, melted butter and salt. Pass through a fine sieve and rest 30 minutes.

  3. Cook eight thin 8 inch (20 cm) crêpes, keeping them pale and soft rather than aggressively browned.

  4. Slice cleaned leeks thinly and cook gently in butter and olive oil without browning. Add wine and reduce, then add stock and cook until extremely soft and almost dry.

  5. Drain and sieve ricotta. Mix with Parmigiano, egg yolk, lemon zest, nutmeg, white pepper and salt, then fold in about two thirds of the leeks.

  6. Make a very light Parmigiano sauce by cooking butter and flour briefly, whisking in milk and cooking only until it lightly coats a spoon. Remove from heat and add Parmigiano and nutmeg.

  7. Fill each crêpe with ricotta mixture, fold into a loose triangle, arrange in a lightly buttered baking dish and spoon only a thin amount of Parmigiano sauce over the top.

  8. Bake at 400°F (205°C) for about 10 minutes and broil briefly if needed. Plate two per guest with reserved fondant leek, a little sauce, chives, black pepper and saffron threads.


Professional Technique

The main mistake with crespelle is treating them like lasagna. They should remain thin, delicate and visible. The sauce is intentionally loose because its purpose is to protect the crêpe during baking and add gloss rather than bury the saffron batter and ricotta filling.
