Homemade Italian Limoncello

The Story of the Dish

Limoncello is one of Italy's most iconic liqueurs, traditionally produced along the Amalfi Coast, the Sorrento Peninsula, and the island of Capri. Made by slowly infusing lemon zest into high-proof alcohol, it captures the essential oils from the peel, creating an intensely aromatic and refreshing digestif. Served ice-cold after a meal, homemade limoncello has a brighter, fresher flavor than most commercial versions and can also be used in desserts, cocktails, or poured over gelato.

Ingredients

  • 12 large organic lemons (preferably unwaxed)

  • 1 bottle (750 ml / 25 fl oz) 190-proof grain alcohol (95% ABV)* or high-proof vodka (see note)

  • 8 cups (1.9 L) water

  • 4 cups (800 g) granulated sugar

*If using 190-proof alcohol, the final limoncello will be around 30–35% ABV after dilution.

Equipment

  • Vegetable peeler

  • Large glass jar with airtight lid

  • Fine mesh strainer

  • Cheesecloth or coffee filters

  • Large saucepan

  • Glass bottles for storage

Preparation

Step 1 – Prepare the Lemons

Wash the lemons thoroughly and dry them completely.

Using a vegetable peeler, remove only the yellow zest. Avoid the white pith, which will make the limoncello bitter.

Step 2 – Infuse the Alcohol

Place the lemon peels into a large glass jar.

Pour the alcohol over the peels until completely submerged.

Seal the jar tightly.

Store in a cool, dark place for 10 to 14 days, shaking gently once every day.

The alcohol will gradually turn a deep golden-yellow color.

Step 3 – Make the Simple Syrup

In a saucepan combine:

  • 8 cups water

  • 4 cups sugar

Heat over medium heat until the sugar dissolves completely.

Do not boil.

Allow the syrup to cool completely to room temperature.

Step 4 – Filter the Infusion

Strain the lemon-infused alcohol through a fine mesh strainer.

Filter a second time through cheesecloth or coffee filters for maximum clarity.

Discard the lemon peels.

Step 5 – Blend

Slowly combine the cooled syrup with the infused alcohol.

Stir well.

Taste.

If you prefer a stronger limoncello, reduce the amount of syrup slightly.

If you like it sweeter, prepare a little extra syrup.

Step 6 – Bottle and Rest

Pour into sterilized glass bottles.

Seal tightly.

Let the bottles rest for 7–14 additional days before drinking.

This resting period allows the flavors to fully blend and become smoother.

How to Serve

Serve directly from the freezer.

The high alcohol content prevents it from freezing solid.

Ideal serving temperature:

28–32°F (-2 to 0°C)

Use chilled cordial glasses.

  • A longer infusion (up to 3 weeks) creates a more intense citrus aroma.

  • Filter twice for a crystal-clear finish.

  • Homemade limoncello continues to improve after one month in the bottle.

  • Almond biscotti

Allowing the liqueur to rest for at least two weeks after mixing produces a smoother, more balanced drink with an intense natural lemon aroma worthy of the finest homemade Italian tradition.
