Torta Morbida agli Amaretti, Pere e Cioccolato Fondente

Ci sono ingredienti che sembrano nati per stare insieme. Gli amaretti, con il loro profumo intenso di mandorla amara, sono uno dei simboli più raffinati della pasticceria italiana. Le pere, dolci e succose, ne esaltano l'aroma senza coprirlo, mentre il cioccolato fondente aggiunge profondità e una leggera nota amara che rende ogni morso equilibrato.

Questa torta nasce dall'incontro tra la tradizione piemontese e lombarda, dove gli amaretti vengono spesso utilizzati sia nei dolci sia nei ripieni salati. È una torta elegante ma semplice, perfetta per una colazione speciale, una merenda raffinata o come dessert accompagnato da una pallina di gelato alla vaniglia.


Ingredients

Serves: 8–10

For the Cake

2 cups (8.82 oz) all-purpose flour

1 cup (7.05 oz) granulated sugar

1 cup (4.23 oz) finely crushed amaretti cookies

1 tsp baking powder

½ tsp baking soda

¼ tsp fine sea salt

3 large eggs

¾ cup (6 oz) unsalted butter, melted

½ cup (4.06 fl oz) whole milk

1 tsp vanilla extract

Zest of 1 organic lemon

2 ripe Bartlett pears, peeled and diced

4 oz (4.23 oz) dark chocolate (70%), roughly chopped

For the Topping

6–8 amaretti cookies, coarsely crushed

Powdered sugar

A few sliced almonds (optional)


Preparation

Preheat the oven to 350°F (347°F). Butter and flour a 9-inch (9.06 in) springform pan.

In a large bowl, whisk together the flour, sugar, crushed amaretti, baking powder, baking soda and salt.

In another bowl, whisk the eggs with the melted butter, milk, vanilla extract and lemon zest until smooth.

Pour the wet ingredients into the dry mixture and stir gently until just combined. Avoid overmixing to keep the cake tender.

Fold in the diced pears and chopped dark chocolate using a spatula, distributing them evenly throughout the batter.

Transfer the batter to the prepared pan and level the surface. Sprinkle the crushed amaretti over the top and, if desired, add a handful of sliced almonds.

Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean with only a few moist crumbs attached.

Allow the cake to cool in the pan for about 15 minutes, then remove it and let it cool completely on a wire rack.

Finish with a light dusting of powdered sugar just before serving.


Chef Tips

Choose pears that are ripe but still firm so they hold their shape during baking.

Finely crushing the amaretti ensures they blend perfectly into the batter and enhance the almond flavor without making the cake heavy.

Use high-quality 70% dark chocolate for the best balance between sweetness and bitterness.

Let the cake rest for a few hours before serving: the flavors become even more harmonious and the texture becomes incredibly moist.

For an elegant dessert, serve each slice with lightly whipped mascarpone cream or vanilla bean gelato.
