Recioto di Soave DOCG is a sweet white wine from the hills east of Verona in Veneto. Made from carefully selected grapes dried through the traditional appassimento process, it combines concentrated sweetness with the natural acidity and mineral character of Garganega.
Honey, dried apricot, candied citrus, pear, almond, and sweet spice define its aromatic profile. History and Territory
Recioto di Soave became Veneto’s first DOCG in 1998. Its production area lies in the central-western Lessini hills east of Verona, where vineyards grow on a varied geological foundation that includes basaltic volcanic soils, clay, and limestone.
The historic Classico zone centers on the hills of Soave and Monteforte d’Alpone. In this landscape, altitude, exposure, and well-drained hillside sites help Garganega develop ripe fruit while retaining the acidity needed to balance a naturally sweet wine.
Garganega and DOCG Rules
Recioto di Soave DOCG must contain at least 70% Garganega. The remainder is based principally on Trebbiano di Soave, with a small allowance for other authorized white varieties.
The denomination permits still and sparkling versions. Recioto di Soave Classico, produced in the historic zone, cannot be sparkling. The vintage must appear on the label.
The production rules protect concentration and identity: the maximum finished-wine yield is 40% of the harvested grapes, minimum residual sugar is 70 grams per liter, and minimum actual alcohol is 12%. The wine cannot be released before September 1 of the year following the harvest.
Appassimento and Winemaking
Only the healthiest and ripest bunches are selected. They are placed in traditional drying rooms, or fruttai, where water slowly evaporates from the berries. This appassimento period concentrates sugar, acidity, aroma, and extract.
After drying, the grapes are gently pressed and the concentrated must ferments slowly. Fermentation stops while substantial natural grape sugar remains. Depending on the producer, maturation may take place in stainless steel, large casks, small barrels, or a combination of vessels.
The objective is balance. Concentration alone is not enough: successful Recioto di Soave needs enough acidity, saltiness, and Garganega’s characteristic almond note to keep the finish articulate and clean.

Serving Temperature and Glassware
Serve Recioto di Soave DOCG at 54–57°F or 12–14°C.
Use a small tulip-shaped dessert-wine glass. The bowl should be large enough to reveal the wine’s dried-fruit and floral aromas, while the narrower opening directs those aromas toward the nose. Avoid serving it too cold, because excessive chill suppresses both texture and perfume.

Recioto di Soave needs dishes with enough sweetness and aromatic depth to meet the wine without hiding its acidity. Pear, hazelnut, almond, apricot, citrus, honey, ricotta, and gentle chocolate are especially effective.
