An éclair is three separate pieces of craft stacked on top of each other, and only one of them is difficult. The pastry cream is a straightforward custard. The glaze is a ganache. The shell is pâte à choux, and choux is the only dough in the European repertoire that is cooked twice before it ever reaches the oven, raised by nothing but its own steam, and judged entirely by feel rather than by measurement. Everything that goes wrong with éclairs goes wrong in the shell.

The sequence is unusual and worth understanding before starting. Water, butter, sugar and salt are brought to a rolling boil, the flour goes in all at once and is beaten into a paste, and that paste is then cooked again on the heat until a film forms on the base of the pan. Those two operations gelatinise the starch and drive off water. Only then does egg go in, a little at a time, until the paste has reached a hydration you can see but cannot weigh. In the oven the remaining water flashes to steam, inflates the gelatinised starch like a balloon, and the egg protein sets around the cavity.

The Italian version differs from the French in two honest ways. The shell is baked darker and then dried in a cooling oven, so it holds its crispness longer. And the top is finished with a real dark chocolate ganache rather than white fondant, which is the substitution that matters, because bitter chocolate has the weight to stand against a vanilla cream in a way that a sugar glaze never does. There is one more thing to be honest about: a filled choux shell begins to soften from the moment the cream goes in, so éclairs are filled close to service and not the night before.

The Story


The éclair appeared in Lyon around the middle of the nineteenth century and is usually traced to the circle around Antonin Carême, who had already codified choux paste as a professional preparation. It began life under the name bâton de Jacob, a plain finger of choux filled with cream, and acquired the name éclair, meaning flash of lightning, by the 1860s. The usual explanation is that it is eaten in a flash. The more convincing one is that the glaze catches the light along the length of the pastry, which anyone who has ever dipped a tray of them will recognise immediately.

Italy took up choux paste early and absorbed it completely, to the point that few Italians think of pasta bignè as foreign at all. Zeppole di San Giuseppe, the fried and baked choux rings eaten on the nineteenth of March, are choux. Profiteroles are choux. Bignè alla crema behind the counter of any bar are choux. Pellegrino Artusi included the paste in his 1891 manual, and by then Italian pastry shops had been making it for decades. What Italy did not adopt was the French habit of finishing with fondant.

Instead the Italian pasticceria reached for what it already had, which was crema pasticcera and good dark chocolate. Crema pasticcera is heavier on yolk and thickened with cornstarch rather than flour, which gives it a cleaner flavour and a firmer set than a French crème pâtissière, and that firmness is what allows an éclair to be filled full without collapsing. Set against 70 percent chocolate rather than sweet fondant, the result is a pastry that is markedly less sweet than its French parent and tastes, correctly, of vanilla and cacao rather than of sugar.


Ingredients


For the choux pastry

  • Water, 1 cup (240 ml)

  • Unsalted butter, cubed, 1/2 cup (115 g)

  • Granulated sugar, 1 tbsp (13 g)

  • Fine sea salt, 1/4 tsp (1.5 g)

  • All purpose flour, sifted, 1 1/4 cups (160 g)

  • Large eggs, 4, beaten together in one jug

  • Large egg, 1 extra, beaten and held in reserve, used only if the paste needs it

For the vanilla pastry cream

  • Whole milk, 2 cups (480 ml)

  • Large egg yolks, 5

  • Granulated sugar, 1/2 cup (100 g)

  • Cornstarch, 1/4 cup (32 g)

  • Vanilla bean, split and scraped, 1

  • Unsalted butter, 1 tbsp (14 g)

For the dark chocolate glaze

  • Dark chocolate, 70 percent cacao, finely chopped, 6 oz (170 g)

  • Heavy cream, 1/2 cup (120 ml)

  • Unsalted butter, softened, 1 tbsp (14 g)

  • Light corn syrup or glucose syrup, 1 tbsp (20 g), optional, for shine


Preparation


Step 1: Make the pastry cream the day before

Split the vanilla bean lengthways, scrape the seeds into the milk, drop the pod in as well, bring it barely to a simmer and then leave it covered off the heat for 20 minutes. Whisk the yolks with the sugar until pale, whisk in the cornstarch until no dry streaks remain, strain the infused milk and pour a third of it into the yolks in a thin stream while whisking. Return everything to the pan.


Step 2: Cook the cream until it boils and thickens

Cook over medium heat, whisking continuously and reaching into the corners of the pan, until it thickens and then actually boils, with two or three slow bubbles breaking the surface. Hold it there for a full 60 seconds. That boil is not optional: cornstarch only reaches full thickening power at boiling point, and there is an enzyme in egg yolk that thins a starch custard over the following day unless it is destroyed by heat. Beat in the butter off the heat, spread the cream thin on a tray, press plastic wrap onto the surface and refrigerate at least 3 hours.


Step 3: Boil the liquid and add the flour all at once

Combine the water, butter, sugar and salt in a heavy saucepan and bring it to a full rolling boil, not a lazy simmer, with the butter completely melted before the boil arrives. Take the pan off the heat, tip in all of the sifted flour in a single movement and beat hard with a wooden spoon until the mixture pulls together into a ball with no dry flour left. Adding the flour gradually gives lumps, and a liquid that has been evaporating while the butter finishes melting will have lost water the recipe needs.


Step 4: Dry the panade

Put the pan back on medium heat and work the paste against the base for another 2 to 3 minutes, spreading it out and gathering it back. You are looking for two signals: a thin film of cooked starch coating the base of the pan, and a paste that no longer sticks to the sides and gives off a faint smell of cooked biscuit. This is where the starch finishes gelatinising and where excess water leaves. A wet panade makes a flat éclair, because it needs more egg than the structure can carry.


Step 5: Cool the paste, then add egg by feel

Transfer the paste to a mixer bowl and beat it on low for 2 minutes to let the steam escape and the temperature fall to around 140°F (60°C), warm but no longer hot to a fingertip. Now add the beaten eggs a little at a time, waiting until each addition has completely disappeared before adding more. The paste will look broken and slippery after each pour and then come back together. Use the fifth egg only if you need it, and never count eggs instead of watching the paste.


Step 6: Read the V

Stop when the paste falls from the paddle or the spoon in a thick ribbon that breaks off in a V shape and holds its point for a second or two before slumping. A paste that snaps off in a stiff clump is too dry and will crack and rise unevenly. A paste that pours in a continuous stream is too wet and will spread flat on the tray. The correct hydration depends on your flour, your pan and how much water left the panade, which is precisely why it cannot be given as a number of eggs.


Step 7: Pipe even fingers

Fit a piping bag with a 15 mm French star nozzle and draw guide lines 5 inches (13 cm) long on the back of the parchment, spaced 2 inches (5 cm) apart, three rows of four. The star nozzle is engineering rather than decoration: its ridges give the expanding shell channels to grow along, so it rises straight instead of splitting where it pleases. Hold the bag at a 45 degree angle, apply steady pressure, pipe along the line and flick the nozzle down sharply at the end to cut the paste. Knock down any peaks with a damp fingertip.


Step 8: Bake without opening the door

Bake at 400°F (200°C) for 15 minutes, then reduce to 350°F (175°C) and continue for another 20 to 25 minutes, until the shells are deeply golden brown and feel light and rigid. Do not open the door at any point in the first 25 minutes. The shells are held up by steam pressure alone until the egg protein sets, and a draught of cool air at that stage drops the pressure and collapses them instantly and permanently. Bake darker than looks comfortable, since a pale shell is an underbaked one.


Step 9: Dry the shells

Turn the oven off, pierce each shell once at one end with the tip of a knife or a skewer, prop the oven door open with a wooden spoon and leave the tray inside for a further 15 to 20 minutes. A shell leaving the oven is still full of steam, and that steam condenses and softens the inner wall, which is the real cause of the classic collapse an hour later. Dried this way they come out lighter, with a dry papery webbing inside instead of a damp one. Cool them completely on a rack.


Step 10: Make the chocolate glaze

Chop the chocolate into pieces no larger than a lentil and put it in a bowl with the optional glucose or corn syrup. Bring the cream just to a simmer and pour it over, wait one full minute, then stir from the centre outwards in tight circles until the ganache is glossy and uniform. Let it fall to about 95°F (35°C) before beating in the softened butter. Butter added to a hot ganache melts straight out of the emulsion and leaves the finished glaze dull and streaked rather than mirror bright.


Step 11: Fill the shells

Beat the chilled pastry cream smooth with a spatula for 30 seconds before it goes near a piping bag, since straight from the refrigerator it is set firm and will tear the shell rather than flow into it. Fit a bag with a narrow filling nozzle, make three holes along the underside of each éclair, and fill from each hole in turn until you feel a distinct back pressure and cream begins to bead at the neighbouring hole. Weight is the honest check: a properly filled large éclair gains about 1 1/2 oz (45 g).


Step 12: Glaze and set

Fill first and glaze second, never the reverse, because a filled éclair is heavy and sits steady while a glazed one cannot be handled without marking it. Hold the éclair at both ends, invert it and lower the top face into the ganache at a shallow angle, dipping only as deep as the shoulder of the shell. Lift, pause for two seconds, and draw the edge across the rim of the bowl in one movement to cut the drip. Set them on a rack and leave the glaze to firm at cool room temperature for 20 minutes.


Plating


Serve at 62 to 64°F (17 to 18°C), which usually means bringing them out of the refrigerator 20 minutes before they are eaten. Cold mutes vanilla almost completely and makes the ganache waxy on the lip, and those twenty minutes bring back both the aroma of the bean and the melt of the chocolate. If the kitchen is warm, shorten it to ten, because a ganache that softens too far picks up fingerprints and loses its gloss.

For a counter or a buffet, line them up in a single row on a long board or a marble slab, all facing the same way, with a finger of space between each one so the glazed faces never touch. Nothing else is needed. An éclair is a pastry that is judged by its edges and its shine, and a plate crowded with garnish only makes the shine harder to see. Never stack them, and never cover a tray of glazed éclairs with plastic wrap, which will lift the glaze clean off.

For a restaurant dessert, the classic Italian treatment is a single éclair set at a slight diagonal on a cold plate, with a spoonful of the same ganache slackened with a tablespoon of warm milk drawn beside it, and nothing more than that. A few flakes of Maldon salt across the glaze is the one modern addition worth making, since salt sharpens 70 percent chocolate considerably. Cut a thin diagonal slice off one end if you want the cross section visible, which is the fairest way to show an éclair that has genuinely been filled.


Professional Technique


Choux is a starch gelatinisation problem before it is anything else. Wheat starch granules absorb water and swell open at around 140 to 160°F (60 to 70°C), and in choux that happens in a boiling liquid rather than in a cold mix, which is why the flour goes into water that is at a genuine rolling boil and why a lazy simmer gives a weak paste. Once those granules have burst they form a gel capable of trapping gas, and the subsequent drying of the panade on the heat drives off the surplus water so the gel is concentrated rather than dilute. Every later step depends on this one being done properly.

The egg is added by feel because the target is a hydration level, not a quantity. How much water left during the drying stage, how absorbent the flour is on the day, how wide the pan was, all change the amount of egg the paste can take, and the difference between four eggs and five is routinely the difference between a flat éclair and a good one. What the egg brings is water for steam, protein for structure and fat and lecithin for tenderness, so under egging gives a small cracked shell that rose poorly and over egging gives a paste that spreads into a puddle before the oven can set it. The V test is the professional shorthand: a ribbon that breaks in a V and holds the point for a second is at the hydration where there is enough water to lift the shell and enough body to hold its shape.

The rise itself is steam and nothing else, with no yeast, no baking powder and no whipped air anywhere in the formula. Water inside the piped paste turns to vapour, expands by a factor of well over a thousand, and pushes the gelatinised starch outward into a hollow shell while the egg protein coagulates around the cavity and locks it in place. That is why the oven door stays shut: opening it in the first fifteen minutes drops both the temperature and the internal pressure while the wall is still soft, and the shell falls and never recovers. It is also why the shells are pierced and dried afterwards, because the steam that did the lifting is still inside and will soften the wall from within if it is allowed to condense there.


Texture and Moisture Control


The plain truth about an éclair is that a choux shell goes soft once it is filled, and no technique prevents it entirely. Pastry cream is roughly three quarters water, the dried shell is hygroscopic, and moisture starts migrating outward through the wall from the moment the two meet. A well dried shell holds a genuine crispness for about two hours at cool room temperature and remains pleasant for four. After that it is a soft pastry, still good but no longer the thing that came out of the oven. This is why pasticcerie fill to order or fill in small batches through the day, and it is the single most useful piece of planning advice in this recipe.

Three things slow the migration down. Baking dark and drying the shells in the switched off oven removes the internal moisture that would otherwise start the softening from the inside before the filling even arrives. Chilling the pastry cream thoroughly and firmly, so it is set rather than loose, reduces how readily its water moves. And the set glaze across the top acts as a genuine barrier, sealing the upper surface against the humidity of the room, which is why a glazed éclair stays crisper than an unglazed one filled at the same moment.

Humidity in the kitchen affects the glaze as much as the shell. Cocoa butter crystallising in a damp room picks up condensation on its surface as it sets and dries dull and streaked instead of mirror bright, so on a wet day let the ganache set at cool room temperature rather than in the refrigerator, where the temperature difference guarantees condensation. If the glaze goes below 86°F (30°C) before dipping it thickens and coats heavily and matt, and above 95°F (35°C) it runs thin and transparent and slides off the shoulders. The working window is narrow and worth checking with a thermometer rather than by eye.


Professional Mise en Place


Choux allows no waiting time once the pan goes on the heat: the panade has to be dried, cooled to about 140°F (60°C) and taken to hydration while it is still warm, so everything must be weighed and within reach before the water boils. Split the work across two days and the second day becomes calm.

Chef Tips


Switch to bread flour if your shells keep collapsing. The higher protein builds a stronger wall that holds the expansion through the second half of the bake, and on a humid day the difference is dramatic rather than marginal. The paste will take slightly more egg to reach the same V, which is expected. Whatever flour you use, sift it, because a lump of dry flour in a panade never disappears afterwards.

Weigh a filled éclair on a small digital scale the first few times you make them. Almost everyone underfills, because back pressure is difficult to judge until you have felt it, and an underfilled éclair is the most common fault in a home batch. A large shell should gain about 1 1/2 oz (45 g) of cream. Once you have felt what that weight corresponds to in the hand you will not need the scale again.

Freeze the shells rather than the finished pastry. Baked, dried and fully cooled shells freeze extremely well: lay them on a tray, freeze until firm, then bag them for up to a month. Refresh them straight from frozen for 5 minutes at 350°F (175°C) and cool them again, and they come back genuinely crisp. This turns a demanding recipe into a half hour job on the day it matters.

Test your oven with a single shell before committing the whole tray. Domestic ovens routinely run 25°F (14°C) away from their dial, and choux is unforgiving of both directions: too cool and the shell sets before it has fully risen, too hot and the outside colours and firms while the inside is still raw. One test shell costs five minutes and tells you more than any thermometer taped to the rack.


Common Mistakes


Opening the oven door in the first fifteen minutes. This ruins more choux than every other error combined. The shells are held up by steam pressure alone until the egg protein has set, and the drop in temperature and pressure collapses them on the spot with no possibility of recovery. Put a light in the oven and look through the glass.

Adding the egg to a panade that is still too hot. Above about 160°F (70°C) the egg begins to cook on contact and scrambles into yellow threads running through the paste. Beat the panade on low for two minutes first and check it with a thermometer or a fingertip: warm, not hot.

Counting the eggs instead of reading the paste. The recipe says four eggs with a fifth in reserve because the correct amount genuinely varies with the flour, the pan and how far the panade was dried. Add gradually and stop at the V, whether that happens at three and a half eggs or at five.

Underbaking the shells. A pale golden éclair looks done and is not, and it will soften and sink within the hour because the wall never became rigid. Take them to a deep golden brown that looks a shade darker than feels comfortable, then dry them in the switched off oven.

Skipping the drying stage. Shells that go straight from the oven to the rack hold trapped steam that condenses inside and softens the wall from within, which is why éclairs that looked perfect at noon are limp by one. Pierce, prop the door and give them 15 to 20 minutes.

Glazing before filling. A glazed shell cannot be handled without marking the surface, and piping cream into it afterwards flexes the shell and cracks the set ganache. Fill first, when the pastry is heavy and stable, and glaze second.

Using the ganache at the wrong temperature. Too cool and it goes on thick, heavy and matt, too warm and it runs off the shoulders leaving a transparent film. Hold it between 86 and 95°F (30 and 35°C) and check with a thermometer rather than trusting the look of it in the bowl.

Filling them the night before. A choux shell starts softening the moment the cream goes in, so an éclair filled at midnight is a soft pastry by breakfast. Fill and glaze within a few hours of eating, and store the shells and the cream separately until then.


Wine Pairing


Moscato d'Asti DOCG: Lightly frizzante, around 5 percent alcohol, and smelling of peach, sage and orange blossom. Its gentle bubble and modest sweetness cut straight through the yolk richness of the pastry cream without adding weight, and its low alcohol keeps it from clashing with the bitterness of a 70 percent glaze. Serve it properly cold, at 43°F (6°C), in a small tulip glass.

Vin Santo del Chianti Classico DOC: Dried in the vinsantaia for months and then aged oxidatively in small caratelli, it arrives with dried apricot, walnut and a distinct caramel edge. Those oxidative notes run alongside a vanilla custard beautifully, echoing the bean rather than competing with it, and the wine carries enough residual sugar and acidity to hold its ground against the chocolate. This is the most Tuscan answer to an Italian éclair.

Colli Orientali del Friuli Picolit DOCG: One of the most delicate sweet wines in Italy, made from a variety whose poor fruit set concentrates the few berries that form. Acacia honey, candied peach and a fine almond bitterness on the close make it a gentler partner than a passito, which suits the vanilla cream better than the glaze. Pour it with a shell that has been dipped lightly rather than coated heavily.

Ramandolo DOCG: Made from Verduzzo Friulano on steep slopes above Nimis, and unusual among sweet whites for its noticeable tannin, which comes from long skin contact. That grip is exactly what makes it work here: it stops the pastry cream coating the palate, and it meets the tannin in the dark chocolate on equal terms. Honey, dried pear and a firm bitter finish.


Storage & Reheating


A filled éclair does not really store, and the honest advice is to assemble only what will be eaten. Filled and glazed, they hold about 4 hours at cool room temperature and up to 24 hours refrigerated in a single layer in an uncovered container, by which point the shell has gone soft and the pastry is a different thing from the one that was made. Never wrap a glazed éclair in plastic, which pulls the glaze off, and never stack them.

The components keep far better than the finished pastry, which is why professional kitchens store them apart. Dried unfilled shells hold 2 days in an airtight tin at room temperature, or a month in the freezer, and come back from either with 5 minutes at 350°F (175°C) followed by a full cooling. Pastry cream keeps 3 days refrigerated with plastic pressed onto its surface, and needs beating smooth again before use. Ganache keeps a week in a sealed jar at cool room temperature.

There is no true reheating of a finished éclair, since warming one melts the glaze and loosens the cream. What can be refreshed is the shell alone, and it responds very well: straight from the freezer or the tin into a 350°F (175°C) oven for 5 minutes, then cooled completely on a rack before filling. Rewarm ganache gently over a bain marie to 86 to 95°F (30 to 35°C), stirring rather than whisking so no air is beaten into it, and never in a microwave, which overheats it in patches and dulls the finish permanently.

These figures are estimates based on the quantities listed and on an even division of cream and glaze across twelve pastries, which in practice is never quite even. The 70 percent chocolate is the one component with anything to recommend it nutritionally, contributing flavanols, iron and magnesium, and its bitterness is also the reason the finished pastry carries noticeably less added sugar than a fondant glazed éclair.
