Girò di Cagliari DOC is one of Sardinia’s most distinctive historic red-wine denominations. Built around the native Girò grape, it can range from dry to sweet and fortified, with the most characteristic expressions offering delicate fragrance, ruby color, and a soft, velvety palate.


Its versatility gives it two clear pairing directions: dry Girò can accompany savory meat and cheese dishes, while sweet and Liquoroso styles are especially successful with honey, almonds, citrus, sapa, and traditional Sardinian pastries.


Denomination Overview


Girò di Cagliari received DOC recognition in 1972. The denomination covers approved vineyard areas in the territories historically associated with the provinces of Cagliari, Carbonia-Iglesias, Medio Campidano, and Oristano.


The denomination permits three principal expressions:


  • Girò di Cagliari, from dry to sweet

  • Girò di Cagliari Liquoroso

  • Girò di Cagliari Liquoroso Riserva


The standard wine must reach a minimum alcohol level of 13.5%, while the Liquoroso style requires at least 17.5%. The standard wine cannot be released before July 1 of the year following the harvest.


Girò di Cagliari Liquoroso Riserva requires at least two years of aging, including no less than one year in oak or chestnut.


Grapes


Girò is the defining grape of the denomination. The production rules require at least 95% Girò in the vineyard. Other vines may be present up to 5% only for pollination, but their grapes cannot be used in the wine.


This preserves the identity of Girò di Cagliari as a wine centered entirely on the aromatic and structural character of the Girò grape.


The Story of Girò di Cagliari DOC


Girò belongs to the historic wine culture of southern Sardinia. Its DOC, established in 1972, protects a style that developed around warm Mediterranean growing conditions and the traditional production of both naturally sweet and fortified red wines.


The authorized zone extends beyond the city of Cagliari and includes vineyard areas across southern and central-western Sardinia. This broad territory allows different expressions, but the denomination remains united by the use of Girò and by its long association with the island’s dessert and meditation wines.


Aging Potential


Girò di Cagliari may be vinified from dry to sweet. Light drying of the grapes on the vine or on mats is permitted, concentrating sugar, flavor, and aromatic intensity before fermentation.


Standard examples can emphasize fragrance, freshness, and a supple texture. Sweet wines show greater richness, while Liquoroso versions add warmth, depth, and persistence through fortification and aging.


Ferruccio Deiana’s Girò Cagliari DOC is produced as a sweet wine and matures for 24 months in French oak barriques followed by four months in bottle. This extended maturation adds depth while retaining the grape’s delicate aromatic character.

Light to medium ruby red, with the possibility of deeper or more evolved tones according to sweetness, fortification, and aging.

Girò is delicately fragrant, with red-fruit and floral impressions at the center. Mature or oak-aged examples can show gentle spice and more developed aromatic depth.


Palate


The palate may range from dry to sweet. Sweet Girò is characteristically velvety and harmonious, while Liquoroso versions are fuller, warmer, and more persistent.


Serving Temperature


Serve sweet Girò di Cagliari DOC at approximately 57°F or 14°C. More structured Liquoroso styles may be served between 57–61°F or 14–16°C.


Use a small tulip-shaped wine glass for sweet and fortified styles. The narrower opening preserves the wine’s delicate fragrance while directing its aromatic intensity toward the nose.


Wine Pairing


Dry Girò works best with savory dishes that have enough richness to meet the wine’s warmth and texture, including veal, roast pork, mature cheese, and meat-based Sardinian preparations.


Sweet and Liquoroso Girò are natural partners for Sardinian desserts based on honey, fresh cheese, almonds, orange, and sapa. The wine should always be at least as sweet as the dish.
