Tartara di Tonno/Tuna Tartare

1 cup diced tuna
for the sauce:
4 medium yellow tomatoes, diced.
1/4 cup chopped onions
1/4 cup rice vinegar
4 tsp ground fresh ginger
1 tsp pink peppercorn
1 tbs honey
1/2 cup Japanese breadcrumbs
sea salt to taste
Place the tomatoes, onions,vinegar,pink peppercorn, honey, breadcrumb, salt and pepper in a mixer.
Blend well until the consistency is smooth.
Than add the sauce in the middle of a plate
Place the tuna in the center of the sauce with the help of a mold to form a small decorative tower
use the panko breadcrumb to control thickness of the sauce. Use seaweed salad to decorate. the tuna obviously it must be not farm raised.
