Italian No Knead Focaccia in a Bowl
Story of the Dish
Focaccia in Ciotola Senza Impasto (Italian No Knead Focaccia in a Bowl)
Focaccia in Ciotola is built around a simple idea: you do not need a stand mixer, traditional kneading or a floured work surface to produce an exceptionally light, open and professional focaccia.
Everything begins and develops inside one bowl.
Instead of kneading, the dough gains strength through rest, hydration and a sequence of folds performed directly in the bowl. Those folds organize and strengthen the gluten network, allowing the dough to retain the carbon dioxide produced during fermentation.
The result is intentionally different from Focaccia Genovese.
This focaccia should be taller, extremely soft inside, irregularly alveolated, deeply golden on top and crisp underneath from extra virgin olive oil and direct contact with the metal pan.
The dough uses 75% hydration, enough to produce a genuinely airy crumb while remaining manageable for a home baker working without a mixer.
The important rule is simple:
Do not add flour because the dough feels sticky.
The dough is supposed to be sticky.
Time and folds will transform it.

Ingredients
For the Dough
17.64 oz strong Italian type 0 flour or strong bread flour
13.23 oz cool water
0.71 oz extra virgin olive oil
0.42 oz fine sea salt
0.07 oz instant dry yeast
For the Pan
1.06 oz extra virgin olive oil
For the Surface Emulsion
1.76 oz water
1.23 oz extra virgin olive oil
0.14 oz fine sea salt
For Finishing
Flaky or coarse sea salt, as needed
Fresh rosemary, optional
Extra virgin olive oil, as needed after baking
Choosing the Flour
High hydration dough requires flour capable of absorbing substantial water while maintaining structure.
Use a strong Italian type 0 flour or a good quality bread flour.
A protein content around 12.5% to 13.5% is a useful general target.
The flour should produce dough that becomes elastic after hydration and folding.
If your flour is particularly weak, 75% hydration may feel excessively loose.
In that situation, reduce the water slightly rather than compensating with additional flour later.
Begin with approximately 12.7 oz water and incorporate the remaining water only if the dough can support it.
Water Temperature
Use cool water.
The objective is not to activate the yeast as rapidly as possible.
We want controlled fermentation.
Aim for a final dough temperature around:
75°F to 78°F
75°F to 79°F
During very warm weather, colder water may be necessary.
During winter, slightly warmer water may be appropriate.
The temperature of the room, flour and bowl all influence final dough temperature.
Initial Mixing
Place 12.35 oz water into a large bowl.
Add the instant dry yeast.
Stir briefly.
Add all 17.64 oz flour.
Using your hand, a dough whisk or sturdy spoon, mix until no significant pockets of dry flour remain.
Do not attempt to create a smooth dough.
At this stage, it will look rough and sticky.
That is correct.
Cover the bowl.
Allow it to rest for 20 minutes.
Why the First Rest Matters
During this rest, the flour absorbs water.
The dough begins developing structure without any significant mechanical work.
When you return after 20 minutes, it should already feel different.
It will still be sticky.
But it should feel more cohesive.
This is the first demonstration that time itself is part of the recipe.
Adding the Salt
Dissolve the 0.42 oz salt into the remaining 0.88 oz water.
Pour the salted water over the dough.
Using wet fingertips, pinch and fold the dough until the water is incorporated.
At first, the dough may appear to separate.
Continue.
It will come back together.
Now add the 0.71 oz extra virgin olive oil.
Fold and squeeze gently until the oil is completely absorbed.
Cover.
Rest for 20 minutes.
Fold Number One
Wet your hand.
Take one edge of the dough.
Stretch it gently upward until you feel resistance.
Fold it toward the opposite side.
Rotate the bowl approximately 90 degrees.
Repeat.
Continue until you have performed approximately four folds around the bowl.
Do not pull until the dough tears.
Cover.
Rest for 20 minutes.
Fold Number Two
Repeat the same process.
You should already notice that the dough behaves differently.
It should stretch farther.
It should feel more elastic.
And it should hold its shape slightly longer before relaxing.
Perform approximately four folds.
Cover.
Rest for another 20 minutes.
Fold Number Three
At this stage, you can begin transitioning toward a gentler coil fold if the dough has developed enough strength.
Wet both hands.
Slide them underneath the center of the dough.
Lift gently.
Allow the front and back portions to fold underneath the central mass naturally.
Rotate the bowl.
Repeat from the opposite direction.
Do not squeeze the dough.
Do not punch it.
Cover.
Rest for 20 minutes.
Fold Number Four
Repeat the coil fold.
At this point, the dough should behave much more like a unified elastic structure.
You may begin seeing small bubbles.
That is fermentation becoming visible.
Preserve them.
The later folds should become progressively gentler because gas retention is now increasingly important.
Cover.
Rest for another 20 minutes.
Fold Number Five
Perform one final gentle coil fold.
Lift from the center.
Allow gravity to stretch the dough.
Let the ends fold underneath naturally.
Rotate.
Repeat.
Stop.
Do not continue folding simply because five folds feel insufficient.
Overworking at this stage can unnecessarily disturb the gas structure you have created.
What the Dough Should Look Like Now
Compare the dough with what you had at the beginning.
Initially:
Wet
Sticky
Rough
Loose
Now it should be:
Smooth
Elastic
Glossy
Aerated
Cohesive
Still soft
Still somewhat sticky
The dough has developed without ever touching a floured work surface.
That is the entire point of this technique.
The Science of the Folds
The folds do not literally introduce the air that creates the final alveoli.
The principal gas inside fermented bread is produced by yeast metabolism.
The role of folding is different.
Folding helps strengthen and organize the gluten network.
That network becomes capable of retaining fermentation gases rather than allowing them to escape.
This distinction is technically important.
We are not stuffing air into the dough.
We are building a structure capable of holding gas.
Beginning Bulk Fermentation
After the final fold, cover the bowl.
Allow the dough to remain at room temperature for approximately 30 to 45 minutes.
You should see some additional expansion.
Do not wait for it to double.
The majority of flavor development will occur during cold fermentation.
Cold Fermentation
Transfer the covered bowl directly to the refrigerator.
This is another advantage of the recipe.
No additional container is necessary.
The dough stays in the same bowl.
Refrigerate for:
Minimum: 12 hours
Recommended: 18 to 24 hours
Maximum: approximately 48 hours
For the best balance of flavor and dough strength, I recommend approximately 24 hours.
What Happens During Cold Fermentation?
Refrigeration slows yeast activity considerably.
It does not immediately stop fermentation.
The dough continues developing slowly.
Flavor becomes more complex.
The gluten relaxes.
Gas accumulates.
The dough becomes increasingly aromatic.
The next day, you should see numerous bubbles beneath the surface.
That is exactly what we want.
Preparing the Pan
Pour approximately 1.06 oz extra virgin olive oil into a 13 × 18 inch metal baking pan.
Spread it thoroughly across the bottom and slightly up the sides.
Use metal rather than glass whenever possible.
Metal transfers heat more effectively and helps produce the deeply golden, crisp bottom that should contrast with the soft interior.
Transferring the Dough
Remove the bowl from the refrigerator.
Allow the dough to stand for approximately 30 minutes.
Oil your hands lightly.
Release the edges gently from the bowl.
Do not pull aggressively.
Do not punch down.
Do not knead.
Do not reshape into a tight ball.
Tilt the bowl over the prepared pan and allow gravity to help the dough release.
Treat the dough as if the bubbles inside were valuable.
Because they are.
The Most Important Rule During Transfer
Do not degas the dough.
One of the most common mistakes with high hydration focaccia is performing excellent fermentation and then destroying the internal structure during transfer.
Be gentle.
Once the dough reaches the pan, allow it to relax for approximately 20 minutes.
Stretching in the Pan
After resting, coat your fingertips with olive oil.
Gently encourage the dough toward the corners.
Do not pull from the edges aggressively.
Press and stretch from underneath or from the center outward.
If the dough resists:
Stop.
Wait another 15 minutes.
Try again.
Never force it.
A properly relaxed high hydration dough will eventually spread with very little effort.
Final Proof
Cover the pan loosely.
Allow the focaccia to proof at room temperature for approximately:
2 to 3 hours
Again, the clock is secondary.
Watch the dough.
The focaccia is ready for dimpling when it has become:
Very aerated
Soft
Jiggly
Filled with visible bubbles
Relaxed across the pan
If you gently shake the pan, the dough should move almost like a soft cushion.
That is the stage we want.
Preparing the Surface Emulsion
Combine:
1.76 oz water
1.23 oz extra virgin olive oil
0.14 oz fine sea salt
Whisk vigorously.
The mixture will temporarily emulsify.
It will eventually separate.
That is normal.
Use it immediately after whisking.
Dimpling the Dough
Preheat the oven thoroughly to:
450°F
446°F
Coat your fingertips generously with olive oil.
Pour approximately half of the surface emulsion over the dough.
Spread your fingers naturally.
Press deeply into the dough.
Go almost to the bottom of the pan.
Lift.
Move to another area.
Repeat.
The bubbles will move around your fingertips.
Some will burst.
Many should remain.
That is fine.
The objective is not to preserve every individual bubble.
The objective is to avoid aggressively flattening the entire dough.
The Correct Dimpling Technique
Do not poke the dough with one finger.
Use several fingertips simultaneously.
Press vertically.
Do not drag your fingers sideways.
Do not squeeze the dough.
Do not flatten the entire surface with your palms.
The focaccia should remain visibly inflated after dimpling.
Adding the Remaining Emulsion
Pour the remaining water and olive oil mixture over the surface.
Allow it to settle naturally into the depressions.
Finish with a restrained quantity of coarse or flaky sea salt.
Fresh rosemary can be added if desired.
Do not overload the surface.
This recipe is designed primarily to showcase the dough.
Baking
Place the focaccia on the lower middle rack.
Bake at:
450°F
446°F
for approximately:
22 to 28 minutes
Rotate the pan once if your oven colors unevenly.
The focaccia is ready when the top is deeply golden and the edges have become crisp.
Do not remove it while pale.
A pale focaccia may be cooked internally but lacks the toasted complexity that makes good focaccia exceptional.
Internal Temperature
For additional precision, measure the center with an instant read thermometer.
Aim for approximately:
200°F to 205°F
199°F to 205°F
Insert the probe into a thick bread section without touching the pan.
Internal temperature is useful as confirmation.
Color and structure still matter.
Checking the Bottom
Lift one corner carefully.
The bottom should be:
Deeply golden
Crisp
Firm
Lightly fried from the olive oil
If the top is ready but the bottom remains pale, move the pan to a lower rack for several additional minutes.
Immediately After Baking
Remove the pan from the oven.
Drizzle the surface very lightly with excellent extra virgin olive oil.
The residual heat will release the fresh aroma of the oil.
Allow the focaccia to remain in the pan for approximately 3 minutes.
Then transfer it carefully onto a wire rack.
Do not leave it sitting in the pan.
Steam trapped beneath the bread will soften the bottom crust.
Resting Before Cutting
This part requires patience.
Wait at least 20 minutes before cutting.
The crumb is still stabilizing immediately after baking.
If you cut too soon, steam escapes rapidly and the interior can appear gummy even when properly baked.
Allow the structure to settle.
The Perfect Cross Section
Now cut through the center.
This is where Focaccia in Ciotola should reveal its personality.
You want:
Large irregular alveoli
Smaller bubbles between them
Thin internal walls
A moist, elastic crumb
A crisp golden bottom
No dense compressed layer
The holes should not be perfectly uniform.
Uniformity is not the objective.
The irregular structure is part of the character.
Why Your Focaccia Has Small Holes
Several factors can produce a tight crumb.
Weak Flour
The gluten cannot retain enough gas.
Insufficient Hydration
Lower hydration generally produces a tighter structure.
Insufficient Fermentation
The dough simply has not generated enough gas.
Aggressive Handling
The baker destroys the gas during transfer.
Underproofing in the Pan
The dough enters the oven before developing sufficient internal gas.
Overproofing
The gluten network becomes too weak to retain the accumulated gas.
Excessive Dimpling
The entire structure is flattened immediately before baking.
Large alveoli require balance.
Why the Dough Is Extremely Sticky
Because it contains 75% hydration.
Do not panic.
Do not pour flour over it.
Use:
Wet hands during folding.
Oiled hands during pan handling.
A dough scraper when necessary.
Time.
Every additional handful of flour changes the recipe.
The goal is to learn how to handle wet dough rather than converting it into dry dough.
Can You Make It the Same Day?
Yes.
Increase the instant dry yeast to approximately 0.14 oz.
After the fifth fold, allow the dough to continue fermenting at room temperature until visibly expanded and aerated.
Depending on room temperature, this may require approximately 1½ to 2½ hours.
Transfer to the oiled pan.
Allow another 1½ to 2 hours of final proofing.
Then dimple and bake.
The result can be excellent.
But the overnight version develops deeper aroma and requires less yeast.
For this recipe, the 24 hour method remains my preference.
Why This Recipe Is Different From Focaccia Genovese
This distinction is important.
Focaccia Genovese should remain relatively low and is characterized particularly by its olive oil rich surface and characteristic deep depressions.
Focaccia in Ciotola has a different objective.
Here we deliberately want:
Higher hydration
Greater height
Larger alveoli
Long cold fermentation
Extremely soft interior
Minimal handling
This is a modern high hydration focaccia technique.
It should not be falsely presented as traditional Fügassa.
Both are excellent.
They simply represent different styles of focaccia.
Serving Suggestions
This focaccia is excellent served warm with nothing more than extra virgin olive oil.
Its height also makes it particularly suitable for sandwiches.
Cut horizontally and fill with:
Mortadella and stracciatella
Prosciutto Crudo and mozzarella
Grilled vegetables and fresh cheese
Tomato, mozzarella and basil
Roast beef and arugula
Artichokes and Pecorino
Because the crumb is extremely light, the bread can accept substantial fillings without becoming excessively heavy.
Mistakes to Avoid
Adding flour because the dough is sticky: This destroys the intended hydration.
Using weak flour: The structure may collapse.
Using too much yeast: Faster does not automatically mean better.
Skipping the rests: Time contributes substantially to gluten development.
Performing violent folds: Stretch until resistance, not until tearing.
Continuing aggressive folds late in fermentation: Preserve the developing gas.
Degassing during transfer: Handle the dough gently.
Forcing the dough into the corners: Allow the gluten to relax.
Underproofing: Look for visible bubbles and a pronounced jiggle.
Overproofing: The structure becomes fragile and can collapse.
Flattening during dimpling: Press vertically with several fingertips.
Baking too pale: Proper browning creates flavor.
Leaving the baked focaccia in the pan: Trapped steam softens the bottom.
Chef Gianluca’s Recommendation
The most important lesson in this recipe is that good bread does not always require aggressive work.
When I make Focaccia in Ciotola, I want the dough to show me how it is developing.
During the first fold it will feel loose.
During the second, you begin feeling resistance.
By the third, the dough starts holding itself together.
By the fourth and fifth, it should feel alive, elastic and increasingly filled with fermentation gases.
That transformation happens without a mixer and without traditional kneading.
Do not ruin it at the end.
Once fermentation has created those bubbles, treat them carefully.
Transfer the dough gently.
Give it enough time in the pan.
When you dimple it, use your fingertips rather than flattening it with your hands.
Then bake it hard enough to create serious color.
When you finally cut the focaccia, the contrast should be immediate.
Crisp underneath.
Deeply golden above.
Extremely soft inside.
Large, irregular alveoli throughout the crumb.
And above everything else, the aroma should come from fermented wheat and excellent extra virgin olive oil, not from excessive yeast.

Vermentino
A dry Italian Vermentino is an excellent partner for plain Focaccia in Ciotola.
Its freshness, subtle citrus character and Mediterranean aromatics complement extra virgin olive oil without overpowering the bread.

If the focaccia is used for sandwiches, choose the wine according to the filling rather than the bread alone.

The Philosophy Behind Focaccia in a Bowl
Traditional bread making often teaches us to place dough on a work surface and knead until gluten develops.
That is only one method.
Gluten development depends on hydration, mechanical movement and time.
When flour absorbs water, its principal gluten forming proteins begin interacting.
The dough gradually develops a network capable of trapping fermentation gases.
Folding strengthens and reorganizes this structure without requiring conventional kneading.
This is particularly useful with high hydration dough.
Instead of fighting a wet mass on the counter, we allow the dough to remain inside the bowl and develop progressively.
Five short folding sessions replace a traditional kneading session.
Between them, time does much of the work.
What No Knead Actually Means
No knead does not mean no technique.
We are eliminating traditional kneading.
We are not eliminating gluten development.
This distinction is important.
The dough will receive five sets of folds, approximately 20 minutes apart.
During the first folds, the dough may appear loose, sticky and almost disorganized.
By the third fold, you should notice considerably more elasticity.
By the fifth, the dough should lift as a more cohesive mass.
That transformation is exactly what we want.
Why 75% Hydration?
Hydration describes the quantity of water relative to flour.
For 17.64 oz flour, this recipe uses 13.23 oz water.
That gives us:
375 ÷ 500 × 100 = 75% hydration
Higher hydration allows greater mobility within the dough and helps produce the irregular open crumb associated with modern high hydration focaccia.
But hydration alone does not create large alveoli.
You also need:
Strong flour
Correct fermentation
Adequate gluten development
Gentle handling
Proper final proof
High oven heat
A 90% hydration dough that is poorly fermented can produce worse focaccia than a properly managed 70% dough.
For this recipe, 75% gives us an excellent balance between openness and control.

Storage and Reheating
Focaccia is always best on the day it is baked.
Once completely cool, store tightly wrapped at room temperature for approximately 1 to 2 days.
For longer storage, freeze it.
Cut into individual portions.
Wrap carefully.
Freeze.
To regenerate, place in a hot oven at approximately:
375°F
374°F
for approximately 6 to 8 minutes.
The crust will become crisp again while the interior remains soft.
