4 lb fresh mussels, cleaned and debearded
For the Broth
¼ cup extra virgin olive oil
2 tbsp unsalted butter
2 shallots, finely minced
4 garlic cloves, thinly sliced
¾ cup dry Pinot Grigio or Soave wine
¾ cup reserved mussel broth, strained
½ cup fresh Italian parsley, chopped
1 tsp fresh thyme leaves
Freshly ground black pepper
Sea salt (if needed)
For Serving
4 thick slices rustic Venetian bread
Extra virgin olive oil

Instructions
Step 1 – Prepare the Mussels
Clean the mussels thoroughly under cold running water.
Remove the beard and scrub the shells.
Discard any cracked or damaged mussels.
Step 2 – Steam the Mussels
Place the mussels in a large covered pot over high heat.
Steam for 3–4 minutes, shaking the pot occasionally.
Once opened, strain and reserve the cooking liquid.
Discard any mussels that remain closed.
Step 3 – Prepare the Venetian Broth
Heat the olive oil and butter in a large sauté pan over medium heat.
Cook the shallots until soft and translucent.
Add the garlic and thyme.
Cook for about one minute until fragrant.
Pour in the white wine.
Allow it to reduce by half.
Add the reserved mussel broth and simmer gently for 5 minutes.
Step 4 – Finish the Dish
Add the mussels to the pan.
Toss gently for 2–3 minutes until fully coated with the aromatic broth.
Stir in the fresh parsley.
Season with freshly cracked black pepper.
Taste before adding any salt.
Step 5 – Serve
Arrange the mussels in warm serving bowls.
Pour the broth generously over the top.
Drizzle with a little extra virgin olive oil.
Serve with toasted Venetian bread and lemon wedges on the side.
