Ingredients For the John Dory: 8 John Dory fillets, approximately 3 to 4 oz each; 2 tbsp extra virgin olive oil; 2 tbsp unsalted butter; 1 garlic clove; 2 sprigs fresh thyme; kosher salt; white pepper. For the Cauliflower Cream: 1 medium cauliflower; 1 small shallot; 1 tbsp unsalted butter; 1 tbsp extra virgin olive oil; 1 cup whole milk; 1 cup light vegetable or fish stock; 1/4 cup heavy cream; kosher salt; white pepper; 1 tsp fresh lemon juice. For the Saffron Mussels: 1 1/2 lb fresh mussels; 1 tbsp extra virgin olive oil; 1 small shallot; 1 garlic clove; 1/2 cup dry white wine; 1/4 tsp saffron threads; 1 tbsp chopped parsley. For the Parsley Oil: 1 packed cup Italian parsley leaves; 1/2 cup extra virgin olive oil; pinch of sea salt. For Finishing: fresh parsley leaves; saffron threads; lemon zest; extra virgin olive oil.
Preparing the Cauliflower Cream Cut the cauliflower into small florets. Heat butter and olive oil in a saucepan. Add the shallot. Cook gently without browning. Add the cauliflower. Cook for approximately 2 minutes. Add the milk and stock. Season lightly. Cook gently until the cauliflower becomes completely tender, approximately 15 to 20 minutes. Add the heavy cream. Cook for another 2 minutes. Transfer to a high speed blender. Blend until completely smooth. Pass through a fine mesh strainer. Adjust with salt, white pepper and lemon juice. The texture must be extremely smooth and glossy.
Preparing the Mussels Clean the mussels carefully. Discard any broken shells or mussels that remain open when tapped. Heat the olive oil in a saucepan. Add shallot and garlic. Cook gently for approximately 1 minute. Add the mussels. Add the white wine. Cover immediately. Cook over high heat for approximately 2 to 3 minutes, shaking the pan occasionally. As soon as the mussels open, remove them. Discard any that remain closed. Strain the cooking liquid through a very fine strainer. Remove most of the mussels from their shells. Keep a few intact for presentation if desired.
Saffron Mussel Jus Take approximately 1 cup of the strained mussel liquid. Add the saffron threads. Allow to infuse for 5 minutes. Reduce gently until slightly concentrated. Taste before adding any salt. The mussel liquor will already be naturally saline. Finish with chopped parsley. Reserve warm.
Parsley Oil Bring a small pot of water to a boil. Blanch the parsley for approximately 10 seconds. Transfer immediately to ice water. Drain and squeeze thoroughly. Blend with the extra virgin olive oil until intensely green. Pass through a fine strainer. Reserve.
Preparing the San Pietro Check carefully for pin bones. Dry the fillets completely. Remove them from refrigeration approximately 10 minutes before cooking. Season immediately before cooking with salt and white pepper.
Cooking the San Pietro Preheat the oven to 400°F. Heat a heavy oven safe skillet over medium high heat. Add the olive oil. Place the fillets into the skillet. If skin is present, begin skin side down. Cook for approximately 2 minutes. Turn carefully. Add the butter, garlic and thyme. Baste for approximately 30 seconds. Transfer to the oven. Finish for approximately 2 to 4 minutes, depending on thickness. Target approximately 130 to 135°F internally. Remove and rest for approximately 2 minutes. The flesh should remain moist and pearlescent.
Final Mussel Finish Warm the saffron mussel jus gently. Add the shelled mussels only at the last moment. Warm for approximately 30 seconds. Do not boil them again. Overcooked mussels become rubbery very quickly.
Michelin Style Plating Place a smooth oval of cauliflower cream slightly off center. Arrange two San Pietro fillets over the cream, slightly overlapping.
