Story of the Dish

Along the sun-drenched coast of Salento, especially in Gallipoli, Porto Cesareo, Otranto, and Santa Maria di Leuca, octopus has always been one of the sea's greatest treasures. Fishermen rarely wasted any part of their catch, and leftover cooked octopus was often transformed into delicious Polpette di Polpo—small seafood croquettes that quickly became a local favorite.

Originally served as a humble family meal or street food during village festivals, these octopus meatballs combined chopped octopus with stale bread, Pecorino cheese, parsley, garlic, eggs, and lemon. Fried until perfectly crisp, they offered a delightful contrast between the crunchy exterior and tender, flavorful interior.

Modern Puglian chefs have elevated this traditional recipe by pairing the croquettes with silky chickpea purée, herb oils, and elegant garnishes while preserving the authentic flavors that have defined Salento's cuisine for generations.

Ingredients

Octopus Meatballs

  • 2 lb cooked octopus, finely chopped

  • 1½ cups Italian bread, crust removed and soaked in milk

  • 2 eggs

  • ½ cup freshly grated Pecorino Romano

  • 2 tbsp chopped Italian parsley

  • 2 garlic cloves, finely minced

  • 1 tsp lemon zest

  • ½ tsp Calabrian chili flakes

  • Sea salt

  • Freshly ground black pepper

  • 1 cup Italian breadcrumbs

  • Vegetable oil for frying

Chickpea Cream

  • 1 (15 oz) can chickpeas, drained

  • 2 tbsp extra virgin olive oil

  • ¼ cup vegetable stock

  • 1 tbsp lemon juice

  • Sea salt

  • White pepper

Herb Oil

  • ¼ cup parsley

  • ¼ cup extra virgin olive oil

Blend until vibrant green.

Garnish

  • Micro herbs

  • Baby parsley

  • Pickled shallot petals

  • Lemon zest

  • Edible flowers

Preparation

Step 1 – Prepare the Mixture

Combine:

  • chopped octopus

  • soaked bread

  • eggs

  • Pecorino

  • parsley

  • garlic

  • lemon zest

  • chili

Season with salt and pepper.

Mix until smooth.

Refrigerate 30 minutes.

Step 2 – Shape

Form 12 equal meatballs.

Roll lightly in breadcrumbs.

Step 3 – Fry

Heat oil to 350°F (175°C).

Fry for 3–4 minutes until golden brown.

Drain on paper towels.

Season lightly with flaky sea salt.

Step 4 – Prepare the Chickpea Cream

Blend:

  • chickpeas

  • olive oil

  • vegetable stock

  • lemon juice

until perfectly smooth.

Pass through a fine sieve for an ultra-silky texture.

Keep warm.

Step 5 – Herb Oil

Blend parsley and olive oil until smooth.

Strain through cheesecloth for a brilliant emerald-green oil.

Step 6 – Plate

Spread a smooth swoosh of warm chickpea cream across a large plate.

Arrange three octopus meatballs in a triangular composition.

Add dots of parsley oil around the plate.

Finish with:

  • micro parsley

  • pickled shallot petals

  • lemon zest

  • edible flowers
