This dessert is built around ricotta and saffron rather than cream and sugar. Sheep’s milk ricotta gives the semifreddo a distinctly Italian dairy character, saffron contributes floral and honeyed notes, fresh orange supplies acidity, toasted almond gives crunch, and burnt honey adds the bitter finish that keeps the dessert from becoming overly sweet.

Ingredients

For the saffron ricotta semifreddo

  • 14 oz fresh sheep’s milk ricotta (400 g)

  • 3 large egg yolks

  • 1/2 cup granulated sugar (100 g)

  • 1/4 cup water (60 ml)

  • 1 generous pinch saffron threads, about 1/8 tsp (0.15 g)

  • 2 tbsp hot heavy cream (30 ml)

  • 3/4 cup heavy cream (180 ml)

  • 1 tsp finely grated orange zest

  • 1/2 tsp pure vanilla extract

  • 1 small pinch fine sea salt

For the orange

  • 3 large oranges

  • 2 tbsp granulated sugar (25 g)

  • 1 tbsp fresh lemon juice (15 ml)

  • 1 tsp finely grated orange zest

For the almond crumble

  • 1/2 cup sliced almonds (55 g)

  • 1/3 cup all purpose flour (40 g)

  • 2 tbsp granulated sugar (25 g)

  • 2 tbsp cold unsalted butter (28 g)

  • 1 small pinch sea salt

For the burnt honey and finishing

  • 1/3 cup good quality honey (110 g)

  • 2 tbsp fresh orange juice (30 ml)

  • 1 tsp lemon juice (5 ml)

  • 1 small pinch sea salt

  • Fresh orange segments

  • Toasted almonds

  • A few saffron threads

  • Orange zest


Preparation

  1. Drain ricotta in the refrigerator for at least 3 hours, preferably overnight, then pass it through a fine sieve. Excess whey creates an icy semifreddo.

  2. Bloom saffron in 2 tbsp (30 ml) hot cream at 150°F to 160°F (65°C to 70°C) for about 25 minutes and cool completely.

  3. Whip egg yolks while cooking sugar and water to 250°F (121°C). Pour the syrup slowly into the yolks while whisking and continue until pale, thick and nearly room temperature.

  4. Mix sieved ricotta with saffron cream, orange zest, vanilla and salt. Fold in the yolk base gently.

  5. Whip the remaining heavy cream to soft peaks and fold into the ricotta mixture in three additions. Fill lined molds and freeze at least 6 hours, preferably overnight.

  6. Supreme two oranges. Reduce about 3/4 cup (180 ml) orange juice with sugar by half, finish with lemon juice and zest, cool, then add fresh segments shortly before service.

  7. For the crumble, rub almonds, flour, sugar, salt and cold butter into irregular crumbs and bake at 325°F (165°C) for 12 to 15 minutes until deeply golden.

  8. Cook honey over medium heat until deep amber and slightly bitter. Carefully add orange juice, then lemon juice and salt. Cool until warm.

  9. Temper the semifreddo 8 to 10 minutes before serving. Plate over almond crumble with fresh orange, orange reduction, controlled drops of burnt honey, toasted almonds, zest and saffron threads.


Professional Technique

Semifreddo depends on the balance of water, fat, sugar and incorporated air. Ricotta contains more water than cream, so draining and sieving are essential. The hot syrup stabilizes the yolks and helps the dessert remain soft when frozen. Cold temperatures suppress saffron aroma, so the infusion must be pronounced without becoming bitter.

Storage & Reheating

The semifreddo keeps frozen for up to 1 week if tightly covered. Almond crumble keeps in an airtight container up to 4 days and burnt honey refrigerated for about 1 week. Prepare the orange component the same day and do not refreeze a fully softened semifreddo.
