Story of the Dish

Although polenta is often associated with hearty mountain cuisine and slow-cooked meats, Italy's coastal regions have long embraced an equally remarkable tradition: pairing creamy polenta with freshly caught seafood. Along the shores of Veneto, Friuli Venezia Giulia, and parts of Liguria, fishermen would return to port at sunrise with baskets of mussels, clams, squid, shrimp, and small fish. Rather than serving them with bread or pasta, they often ladled the fragrant seafood stew over freshly prepared soft polenta.

The combination may seem unexpected, but it is remarkably balanced. The natural sweetness of slowly cooked corn enhances the delicate flavor of shellfish without overpowering it. Unlike pasta, which absorbs much of the broth, creamy polenta allows every spoonful of saffron-infused seafood broth to shine.

This refined version elevates the traditional recipe using premium Italian saffron, Vermentino wine, sweet cherry tomatoes, fragrant basil, and a rich shellfish broth. Finished with exceptional extra virgin olive oil and fresh herbs, it is a dish that captures both the sea and the countryside on a single plate.

Elegant enough for fine dining, yet deeply rooted in Italian tradition, this is one of the most luxurious ways to enjoy polenta.

Ingredients

Serves: 4

For the Creamy Polenta

  • 2 cups Italian stone-ground yellow polenta

  • 8 cups water

  • 2 tsp kosher salt

  • 3 tbsp unsalted butter

  • ¾ cup freshly grated Parmigiano Reggiano

Seafood Stew

  • 1 lb fresh mussels, cleaned

  • 1 lb littleneck clams, purged

  • 12 large shrimp, peeled and deveined

  • 10 oz calamari, sliced into rings

  • 2 tbsp extra virgin olive oil

  • 4 garlic cloves, thinly sliced

  • 2 shallots, finely diced

  • 1 cup cherry tomatoes, halved

  • ¾ cup Vermentino wine

  • 2 cups homemade seafood stock

  • 1 generous pinch Italian saffron threads

  • 2 tbsp unsalted butter

  • 1 tbsp fresh parsley, chopped

  • 8 basil leaves

  • Salt and freshly ground black pepper

Garnish

  • Basil leaves

  • Fresh parsley

  • Lemon zest

  • Extra virgin olive oil

  • Fresh cracked black pepper

Preparation

Prepare the Polenta

Bring the salted water to a gentle boil.

Slowly whisk in the polenta while stirring continuously.

Reduce the heat to low and cook for approximately 45–50 minutes, stirring frequently to obtain a perfectly smooth texture.

Finish with the butter and Parmigiano Reggiano.

Keep warm.

Build the Seafood Base

Heat the olive oil in a wide sauté pan.

Cook the shallots until soft.

Add the sliced garlic and cook gently without browning.

Add the cherry tomatoes and cook until they begin to soften.

Pour in the Vermentino wine.

Allow it to reduce by half.

Add the seafood stock together with the saffron.

Simmer gently for 10 minutes so the saffron fully perfumes the broth.

Cook the Seafood

Add the mussels and clams.

Cover the pan and cook until they begin to open.

Discard any shellfish that remain closed.

Add the calamari and cook for about 2 minutes.

Finally, add the shrimp and cook just until they become opaque, approximately 2 minutes.

Finish with butter, parsley and basil.

Taste and adjust seasoning.

The broth should be fragrant, silky and lightly golden from the saffron.

Plate the Dish

Spread a generous layer of creamy polenta into warm shallow bowls.

Carefully spoon the seafood stew over the center.

Arrange the mussels, clams, shrimp and calamari naturally to create height.

Finish with basil leaves, chopped parsley, freshly grated lemon zest, cracked black pepper and a generous drizzle of exceptional Italian extra virgin olive oil.

Serve immediately while the seafood is at its peak and the polenta remains creamy.

Wine Pairing

A chilled Vermentino di Sardegna DOC is the ideal companion, offering crisp acidity, citrus aromas and Mediterranean minerality that perfectly complement the saffron and shellfish.

An excellent Lugana DOC is another elegant choice.

  • Never overcook shrimp or calamari; they become tough within minutes.

  • Use homemade seafood stock whenever possible for a naturally sweet, clean flavor.

  • Add saffron to warm broth rather than directly into the pan to extract its full aroma and color.

  • Discard any mussels or clams that remain closed after cooking.

  • Finish the dish with high-quality Italian extra virgin olive oil immediately before serving for maximum fragrance.
