Story of the Dish

Aragosta alla Catalana is one of the great seafood preparations associated with Sardinia, particularly the northwestern coast around Alghero, where Catalan cultural influence remains deeply rooted. The traditional concept is beautifully simple: lobster, tomatoes, onion, olive oil and acidity. This interpretation keeps that philosophy but transforms the dish into a refined restaurant presentation. Lobster remains the protagonist, while sweet blue crab adds marine flavor, avocado contributes richness, and orange, blood orange and lemon provide acidity, perfume and freshness.

Ingredients

Lobster: 2 whole lobsters, 1¼–1½ lb each; 2 tbsp EVOO; salt; white pepper. Blue crab: 8 oz fresh blue crab meat; 1 tbsp EVOO; 1 tsp lemon juice; 1 tbsp chives; salt; white pepper. Citrus: 1 blood orange; 1 orange; 1 pink grapefruit; 1 lemon; orange and lemon zest. Avocado cream: 2 Hass avocados; 1½ tbsp lemon juice; 1 tbsp EVOO; 1–2 tbsp cold water; salt. Vegetables: 1 cup cherry tomatoes; ½ small red onion; 1 small celery heart; parsley. Dressing: ¼ cup EVOO; 2 tbsp orange juice; 1 tbsp lemon juice; 1 tsp blood orange juice; ½ tsp Dijon; salt; black pepper. Finishing: basil, celery leaves, chives, EVOO, flaky sea salt.

Preparation

Cook lobsters in heavily salted boiling water 6–8 minutes depending on size, then chill immediately in ice water. Remove tail and claw meat carefully and cut tails into thick medallions. Season lightly with EVOO, salt and white pepper. Inspect crab meat for shell fragments and gently season with oil, lemon, chives, salt and pepper. Supreme the citrus over a bowl to capture juices. Blend avocado with lemon juice, EVOO, salt and enough cold water for a silky texture; pass through a fine sieve. Halve or quarter tomatoes, slice red onion paper thin and soak it in ice water 10 minutes, then drain and dry. Slice celery thinly. Whisk citrus juices with Dijon and slowly emulsify with EVOO. Immediately before service, season vegetables, lobster and crab separately. Plate avocado cream, lobster medallions and claw, natural clusters of blue crab, vegetables and citrus segments. Finish with dressing, herbs, zest, EVOO and flaky salt.

This dish should not be reheated. Cooked lobster and crab must remain refrigerated and are best used promptly. Prepare citrus and avocado cream ahead, but cut and season tomatoes close to service.
