Espresso is part of the rhythm of daily Italian life, and it gives panna cotta a distinctly Italian aromatic identity. The challenge is keeping the coffee recognizable after it meets cream without adding so much liquid or bitterness that the structure becomes weak.

The ideal result has the color of a light caffè macchiato and the aroma of freshly extracted espresso. Cream arrives first on the palate, followed by roasted coffee, subtle vanilla, and a restrained sweetness.

Ingredients


  • 2 1/2 cups heavy cream

  • 1/2 cup freshly brewed strong espresso

  • 1/3 cup granulated sugar

  • 2 1/4 tsp unflavored powdered gelatin

  • 3 tbsp cold water

  • 1 tsp pure vanilla extract

  • Small pinch fine sea salt

  • 1/2 cup espresso plus 3 tbsp sugar for syrup

  • Dark chocolate shavings and softly whipped cream, optional


Preparation


  1. Brew strong espresso immediately before starting.

  2. Bloom gelatin in cold water.

  3. Heat cream, sugar, and salt until steaming.

  4. Remove from the heat, stir in espresso, then add bloomed gelatin and vanilla.

  5. Strain, cool briefly, divide among molds, and refrigerate at least 5 hours.

  6. For syrup, simmer espresso with sugar for 4 to 6 minutes until slightly reduced, then cool.

  7. Unmold and serve with a small amount of espresso syrup and dark chocolate.


Professional Technique


Use strong, freshly extracted espresso and add it after the cream is hot. Do not reduce the syrup to a sticky caramel; it should stay fluid and slightly bitter.
