Panna Cotta al Limoncello should taste like cream illuminated by lemon, not like a gelatin mold flavored with alcohol. The structure must be barely firm enough to unmold, with a visible wobble and a clean spoon cut. Limoncello is added below 120°F (49°C) so its fresh peel aroma is not boiled away. Lemon zest infuses the dairy earlier, giving depth without adding acidic juice that could curdle the cream.
Gelatin quantity is intentionally restrained. Seven grams set 4 cups (960 ml) of dairy plus the liqueur into a delicate restaurant-style panna cotta. Different gelatin brands vary in bloom strength, so weigh it. The mixture is strained, chilled rapidly, portioned, and refrigerated for at least 6 hours. A thin limoncello-lemon sauce supplies acidity at service.
Use metal molds or smooth ramekins if unmolding. Glasses are equally valid and eliminate the most stressful step, but the same texture rules apply. The dessert should never be frozen to force a quick set; freezing damages the milk gel and causes weeping.
Ingredients

3 cups (720 ml) heavy cream

Preparation
Lightly oil eight 4-ounce (120 ml) molds with a neutral oil, then wipe until no visible droplets remain. If serving in glasses, omit this step.
Sprinkle the gelatin evenly over the cold water. Do not stir immediately. Let it bloom for 10 minutes until fully hydrated and opaque.
Combine the cream, milk, 3/4 cup (150 g) sugar, and lemon zest strips. Heat slowly to 170°F (77°C), stirring to dissolve the sugar. Do not boil.
Remove from the heat, cover, and infuse for 15 minutes. Strain out the zest, rewarm gently if the mixture has fallen below 140°F (60°C), then whisk in the bloomed gelatin until completely dissolved.
Cool the mixture over an ice bath, stirring, to 115–120°F (46–49°C). Stir in 1/3 cup (80 ml) limoncello. Strain again through a fine sieve.
Divide among molds, cover, and refrigerate on a level shelf for at least 6 hours, preferably overnight. Do not move them during the first hour.
For the sauce, whisk lemon juice, 1/3 cup (65 g) sugar, and cornstarch in a small pan. Bring to a simmer and cook 60 seconds. Cool completely, then stir in 2 tablespoons (30 ml) limoncello.
To unmold, dip the mold in warm water for 3–5 seconds, dry it, loosen one edge with a fingertip, and invert onto a cold plate. Repeat briefly rather than holding in water too long.
Spoon a restrained amount of sauce around the base and finish with fine lemon zest. Serve at 42–46°F (6–8°C), not directly from the coldest part of the refrigerator.
Professional Technique
The texture of panna cotta is a controlled gel, not a firm molded custard. Gelatin strength varies by brand, so weigh it whenever possible and bloom it in at least five times its weight of cold water. Let it hydrate for 5 to 10 minutes without stirring. Heat the cream mixture only until steaming, approximately 175°F (79°C); boiling reduces fresh dairy flavor and increases evaporation, which makes the final set firmer than intended. Remove the pan from the heat before adding the bloomed gelatin and stir gently until completely dissolved. Whisking introduces bubbles that remain visible on the surface after unmolding.
Limoncello should enter after the base cools to about 120°F (49°C). At a higher temperature its volatile lemon aroma dissipates; at a much lower temperature the gelatin can begin setting before the liqueur is evenly distributed. Strain the mixture through a fine sieve into a clean pitcher and skim any foam. Pour close to the molds so the stream does not trap air. Chill uncovered for 20 minutes, then cover and refrigerate for at least 6 hours. Moving the molds during the first hour can create a slanted set and a fragile upper layer.
For unmolding, dip only the outside of each mold in warm water for 4 to 6 seconds and dry it immediately. Release the edge with a fingertip, place the cold serving plate on top, and invert in one decisive movement. A knife cuts the surface and leaves an obvious ring, so use it only as a last resort. The correct panna cotta trembles across the entire surface when the plate is moved but does not spread. If the center slumps, return the remaining molds to the refrigerator for 1 hour rather than adding more heat during release. For identical portions, fill every mold by weight and reserve one as the test piece. Add any limoncello sauce at service, not before refrigeration, because alcohol and sugar on the surface can weaken the gel and create a watery halo.
Gelatin must hydrate before it meets hot liquid. Dry granules added directly to cream form rubbery particles that no amount of whisking can fully dissolve. Bloom in a wide surface of cold water for uniform hydration.
Boiling dairy is unnecessary and can create a cooked flavor. Heating to 170°F (77°C) dissolves sugar, infuses zest, and provides enough warmth to melt gelatin. Limoncello is delayed until the mixture cools below 120°F (49°C), protecting volatile citrus aroma.
Acid and dairy are separated intentionally. Fresh lemon juice belongs in the sauce, not the cream base. Concentrated acid in hot cream can cause protein aggregation and a grainy texture.
Unmolding is controlled heat transfer. A few seconds of warm water softens only the exterior. Prolonged dipping melts a visible layer and leaves the panna cotta slumped and wet.
