For most Italian bread recipes calling for durum wheat, semola rimacinata is generally more appropriate than very coarse semolina because its smaller particles hydrate more efficiently and form a more cohesive dough.

What Is Regular Flour?

“Flour” is a very broad term.

Most ordinary baking flour in the United States is produced primarily from common wheat, scientifically known as Triticum aestivum.

Depending on the wheat variety and how the grain is milled, the resulting product can become:

Protein Percentage Does Not Tell the Entire Story

Can You Make Bread with 100% Semolina?

Yes.

Semolina vs Flour for Pizza

Semolina can play several completely different roles in pizza.

It can become part of the actual dough.

It can be used as bench flour during stretching.

It can also be sprinkled underneath the pizza to prevent sticking to the peel.

A small quantity of semolina underneath pizza can reduce sticking because the coarse particles help the dough move across the peel.

However, excessive semolina can burn in very hot pizza ovens and create unpleasant bitter flavors.

For high-temperature pizza baking, semolina should therefore be used carefully.

Finely remilled durum can also be incorporated directly into pizza dough for flavor and color, but it should not automatically replace pizza flour without adjusting hydration, fermentation, and dough handling.

Does Semolina Make Bread Crispier?

Sometimes, but the answer is more complicated than a simple yes or no.

Can You Substitute Semolina for Flour?

Sometimes.

If a bread recipe uses 4 cups of bread flour and all of it is replaced with coarse semolina, the resulting dough will almost certainly behave differently.

Highly Open Artisan Bread

Use strong bread flour as the structural base and add durum selectively.

Focaccia

A combination of strong flour and semola rimacinata can provide excellent flavor while maintaining extensibility.

Pizza

Use an appropriate pizza flour as the primary flour when the style requires considerable extensibility, adding durum deliberately rather than automatically.

Fresh Pasta

Once you understand how that dough behaves, gradually experiment with 40 percent, 50 percent, and eventually 100 percent durum formulations.
