Unlike many heavy seafood pasta dishes found outside Italy, the authentic version is elegant, balanced, and allows the seafood to remain the star of the plate.

Ingredients
14 oz (400 g) spaghetti or linguine
12 shrimp, peeled and deveined
12 mussels, cleaned
12 clams, cleaned
8 oz (250 g) calamari, sliced into rings
1 cup cherry tomatoes, halved
4 cloves garlic, finely sliced
1/2 cup dry white wine
4 tablespoons extra virgin olive oil
1 tablespoon fresh parsley, chopped
Sea salt to taste
Freshly ground black pepper
Red pepper flakes (optional)
Instructions
Step 1: Prepare the Seafood
Rinse the mussels and clams thoroughly under cold water. Discard any that are already open and do not close when tapped.
Pat the shrimp dry and season lightly with salt and pepper.
Step 2: Cook the Pasta
Bring a large pot of salted water to a boil.
Cook the spaghetti or linguine until al dente according to package instructions.
Reserve one cup of pasta water before draining.
Step 3: Build the Sauce
In a large sauté pan, heat the extra virgin olive oil over medium heat.
Add the garlic and cook gently until fragrant.
Add the calamari and cook for about two minutes.
Add the shrimp and cook for another two minutes.
Pour in the white wine and allow the alcohol to evaporate.
Add the mussels and clams. Cover with a lid and cook until they open, approximately four to five minutes.
Remove any shellfish that remain closed.
Step 4: Add the Tomatoes
Add the cherry tomatoes and cook for three to four minutes until they begin to soften.
Season lightly with salt, black pepper, and a pinch of red pepper flakes if desired.
Step 5: Finish the Dish
Add the drained pasta directly to the seafood mixture.
Toss gently, adding a little reserved pasta water if necessary to create a silky sauce.
Finish with fresh parsley and a drizzle of extra virgin olive oil.
Serve immediately.
Chef's Tip
Never overcook seafood. Shrimp become rubbery, calamari becomes tough, and shellfish lose their natural sweetness. The secret to exceptional seafood pasta is cooking each ingredient only as long as necessary.
