Ingredients

½ cup fresh orange juice
¼ cup Marsala
2 tbsp granulated sugar
1 tsp cornstarch
1 tbsp unsalted butter

Toasted sliced almonds
Finely chopped pistachios

Preparation
1. Prepare the Pastry
Combine flour, sugar, salt, and orange zest. Add the cold butter and work it into the dry ingredients until the mixture resembles coarse crumbs. Add the egg, egg yolks, and vanilla. Mix only until the dough comes together. Shape into a disk, wrap, and refrigerate for at least 1 hour.
2. Prepare the Filling
Combine the dried figs, almonds, chocolate, candied orange peel, raisins, honey, Marsala, cinnamon, cloves, and orange zest. Mix thoroughly until the filling becomes cohesive but still retains texture. Allow it to rest for at least 20 minutes so the figs absorb the Marsala and citrus aromas.
3. Prepare the Almond Crumble
Preheat the oven to 350°F. Combine almond flour, all-purpose flour, sugar, butter, and salt until irregular crumbs form. Spread on a parchment-lined tray and bake for 10–12 minutes, until lightly golden. Cool completely.
4. Prepare the Orange Marsala Sauce
Combine orange juice, Marsala, sugar, and cornstarch in a saucepan. Cook over medium heat while whisking until lightly thickened. Remove from the heat and whisk in the butter. Keep the sauce fluid and glossy.
5. Shape and Bake the Buccellato
Roll the chilled pastry to approximately ⅛ inch thick. Cut eight rounds approximately 4 inches in diameter. Place four rounds on a parchment-lined tray and spoon a compact portion of fig filling in the center of each. Bake the pastry rounds and filling components at 350°F for 15–18 minutes, until golden. Bake the remaining four rounds separately to create the upper pastry layers. Cool completely.
Open Raviolo Style Plating
Place one pastry round slightly off-center on each plate. Spoon or shape the fig and almond filling over the center, keeping the texture visible. Rest the second pastry round above the filling at a slight angle rather than sealing the dessert completely. Add several controlled dots of orange Marsala sauce around the plate. Place almond crumble in one deliberate section. Finish with toasted almonds, chopped pistachios, fresh orange zest, and a very light dusting of powdered sugar over the upper pastry disk only. The filling should remain clearly visible between the two pastry layers.
