Pasta con sardine fresche is a simpler coastal Italian preparation than the classic Sicilian pasta con le sarde. Fresh sardines are cooked quickly with garlic, tomato, parsley, and a little chile so the fish remains moist and the sauce stays bright.

Ingredients
12 oz spaghetti 1 lb fresh sardines, cleaned and filleted 3 tbsp extra virgin olive oil 3 garlic cloves, thinly sliced 1/4 tsp red pepper flakes 1 cup cherry tomatoes, halved 1/2 cup dry white wine 1/2 tsp kosher salt, plus pasta water 1/4 cup chopped Italian parsley 1 tsp finely grated lemon zest 2 tbsp toasted breadcrumbs, optional
Preparation
1. Bring a large pot of well salted water to a boil. 2. Heat olive oil in a wide skillet over medium low heat. Add garlic and chile and cook 45 seconds without browning. 3. Add tomatoes and a pinch of salt; cook 5 minutes until they begin to collapse. 4. Add wine and reduce by half. Lay sardine fillets into the sauce and cook gently 2 to 3 minutes. 5. Cook spaghetti 2 minutes short of al dente. Transfer directly to the skillet with about 1/2 cup pasta water. 6. Toss gently over medium heat until the pasta is al dente and the sauce emulsifies. Break only some sardines so visible pieces remain. 7. Finish off heat with parsley, lemon zest, and breadcrumbs if using.
Professional Technique
Keep the sauce loose enough to finish the pasta in the pan. Sardines are delicate and need very little cooking; adding them before the pasta prevents overhandling later. Lemon zest goes in off heat to preserve aroma.
Chef Tips
Use the freshest sardines possible and dry them well after cleaning. Slice garlic rather than mincing so it perfumes the oil without disappearing into the sauce. Keep a full cup of pasta water available.
Common Mistakes
Do not brown or burn the garlic, overcook the sardines, or use heavy tomato sauce. Avoid cheese, which overwhelms the fish. Do not add lemon juice early because the acidity can make the fish texture firmer.
Wine Pairing
Vermentino is a natural match for oily fish. Falanghina offers citrus and herbs. Pecorino from Abruzzo brings acidity and structure. Etna Bianco adds saline minerality. Verdicchio works especially well with the parsley and lemon.
Storage and Reheating
Best eaten immediately. Refrigerate up to 1 day and reheat gently with a little water. Do not freeze.
