Italian Mixology: Godmother all’Italiana

The Godmother is traditionally vodka and amaretto. That simplicity is also its weakness: too much amaretto makes it sweet and one-dimensional, while truly neutral vodka can leave very little to discover after the first sip. The Zafferano & Co. version uses Altamura Vodka, Disaronno Originale, a small measure of Amaro Montenegro, orange bitters and two drops of saline solution.

Ingredients

  • 2 oz (60 ml) Altamura Vodka

  • 1/2 oz (15 ml) Disaronno Originale

  • 1/4 oz (7 ml) Amaro Montenegro

  • 2 dashes orange bitters

  • 2 drops 20% saline solution

  • 1 large clear ice cube

  • 1 wide orange peel

  • 1 Amarena cherry

Preparation

Add vodka, Disaronno, Montenegro, orange bitters and saline to a mixing glass. Fill three quarters full with hard ice and stir for 20 to 25 seconds. Strain over one large clear cube in a chilled Old Fashioned glass. Express orange oil across the surface and garnish with one Amarena cherry.

The Zafferano & Co. Ratio

The alcoholic structure is 8 parts vodka, 2 parts Disaronno and 1 part Amaro Montenegro. The vodka remains dominant. Montenegro adds orange peel, herbs and gentle bitterness without changing the Godmother into an amaro cocktail.

The Ingredient Most Bartenders Forget: Salt

Prepare a 20% saline solution with 0.7 oz (20 g) fine sea salt and 2.8 oz (80 g) filtered water. Use exactly two drops per cocktail. You should never taste salt. In tiny quantities, it can make almond, orange, vanilla and grain flavors feel more distinct and can soften the perception of bitterness.

Why Altamura Vodka

The vodka is not treated as anonymous alcohol. Altamura gives the drink an Italian grain base and enough body to carry Disaronno and Montenegro while keeping the first sip clean.

Why Disaronno Originale

Disaronno supplies almond, marzipan, stone fruit, vanilla, caramel and warm spice. At 1/2 oz (15 ml), the amaretto is immediately recognizable without taking control of the finish.

Why Amaro Montenegro

Montenegro contributes orange peel, herbs, floral botanicals, spice, caramel and gentle bitterness. It changes the final third of the drink: vodka and almond lead, while orange and herbs remain after the swallow.

Professional Technique

  • Stir, never shake

  • Use hard ice

  • Target roughly 20 to 25% dilution

  • Serve over one large clear cube

  • Express orange oil at service

  • Use exactly two drops of saline

Flavor Architecture

The sequence should be orange oil, clean grain, almond and marzipan, vanilla and stone fruit, then orange, herbs and spice. If sweetness remains on the palate for a long time, the drink contains too much Disaronno.

  • 1 3/4 oz (52 ml) Altamura Vodka

  • 1/2 oz (15 ml) Disaronno Originale

  • 1/2 oz (15 ml) Amaro Averna

  • 2 dashes orange bitters

This after dinner variation is darker and more bittersweet.

Godmother Bianca

  • 2 oz (60 ml) Altamura Vodka

  • 1/2 oz (15 ml) Disaronno Originale

  • 1/4 oz (7 ml) Italicus Rosolio di Bergamotto

  • 2 dashes orange bitters

Stir and garnish with expressed lemon peel. Bergamot makes this version brighter and more aperitivo oriented.

Godmother al Caffè

  • 2 oz (60 ml) Altamura Vodka

  • 1/2 oz (15 ml) Disaronno Originale

  • 1/4 oz (7 ml) Caffè Borghetti

  • 1 dash chocolate bitters

Stir and serve over one large cube with orange peel. Do not add espresso; the objective is a stirred Godmother with coffee aroma, not an Espresso Martini.

Batch for 6 Cocktails

  • 12 oz (355 ml) Altamura Vodka

  • 3 oz (90 ml) Disaronno Originale

  • 1 1/2 oz (45 ml) Amaro Montenegro

  • 12 dashes orange bitters

  • 12 drops 20% saline solution

Refrigerate. For each cocktail, measure 2 3/4 oz (82 ml), stir with ice, strain over a large cube and express fresh orange peel. Add one Amarena cherry.

  • Using too much Disaronno

  • Using equal parts vodka and amaretto

  • Using too many cherries

Final Service Standard

One chilled Old Fashioned glass, one large clear cube, one amber cocktail, one expressed orange peel and one Amarena cherry. Vodka should lead, Disaronno should define the center, Montenegro should live primarily in the finish, and the saline should never be detectable.
