What Is Parsley?

Parsley is an aromatic herb in the Apiaceae family. Flat-leaf parsley is generally preferred in Italian cooking because it has a more direct flavor and easier texture than tightly curled types. Both leaves and tender stems are useful.


Leaves and Stems

Leaves are best for fresh finishing, while stems contain strong flavor and can be used in stocks, braises and herb bundles. Tender upper stems can also be finely chopped with the leaves instead of discarded.


Chopping Correctly

Use a sharp knife and chop only as much as needed. Repeated heavy chopping bruises the leaves, darkens the herb and drives aroma into the cutting board. A clean, quick chop preserves freshness.
