Look for tomatoes that smell fresh and feel heavy for their size. Ripeness should match the intended use: delicate raw preparations require mature fruit, while firmer tomatoes may be better for slicing or roasting.


Storage

Good ripe tomatoes generally taste better when not held excessively cold. Refrigerate only when necessary to prevent spoilage, then bring them closer to room temperature before serving.

Taste before seasoning. Tomato sweetness and acidity vary enormously, so salt, sugar and added acid should be adjusted to the actual fruit rather than a fixed formula.


Common Mistakes

Using watery tomatoes for sauce can produce long, flat reductions. Refrigerating every tomato automatically can dull aroma. The correct variety and ripeness matter more than cosmetic perfection.
