Ingredients

For the Mussels

4 lb fresh mussels, cleaned and debearded

For the Pancotto

12 oz rustic Italian country bread, one day old, cut into large cubes

1 bunch wild chicory (or dandelion greens), roughly chopped

1 pint cherry tomatoes, halved

4 garlic cloves, thinly sliced

⅓ cup extra virgin olive oil

½ tsp crushed red pepper flakes

¾ cup dry white wine

1 cup reserved mussel broth, strained

2 cups vegetable broth

½ cup fresh Italian parsley, chopped

Freshly ground black pepper

Sea salt, if needed


Preparation

Step 1 – Prepare the Mussels

Scrub the mussels thoroughly under cold running water.

Remove the beard and discard any damaged shells.

Steam the mussels in a covered pot over high heat for 3–4 minutes, until they open.

Strain and reserve the cooking liquid.

Discard any unopened mussels.

Step 2 – Prepare the Greens

Bring a large pot of salted water to a boil.

Cook the chicory for 5 minutes.

Drain well and roughly chop.

Set aside.

Step 3 – Build the Broth

Heat the olive oil in a large Dutch oven.

Add the garlic and crushed red pepper.

Cook gently until fragrant.

Pour in the white wine and reduce by half.

Add the cherry tomatoes and cook for 5 minutes until they begin to soften.

Stir in the reserved mussel broth and vegetable broth.

Bring to a gentle simmer.

Step 4 – Make the Pancotto

Add the bread cubes and chopped chicory to the simmering broth.

The bread should absorb most of the liquid while remaining slightly chunky.

Fold the mussels into the pancotto.

Cook gently for 2–3 minutes just until heated through.

Finish with chopped parsley, freshly ground black pepper, and a generous drizzle of extra virgin olive oil.

Step 6 – Serve

Divide the pancotto among warm bowls.

Top with additional mussels.

Serve immediately with toasted country bread if desired.
