Story of the Dish
Classic tiramisù depends on balance: mascarpone, eggs, sugar, espresso and savoiardi. Pistachio changes that balance, so this version is deliberately a reinterpretation. Pistachio must run through the mascarpone cream rather than appear only as decoration. Pure pistachio paste is essential because heavily sweetened spreads add unnecessary sugar and vegetable fat.
The mascarpone cream uses pasteurized yolks gently cooked with sugar, cold mascarpone and pistachio paste, then medium whipped cream for lightness. Espresso remains important because its bitterness keeps the dessert recognizable as tiramisù. After an overnight rest, the dessert should cut cleanly while remaining soft on the spoon.
Ingredients
Pistachio Mascarpone Cream
5 large pasteurized egg yolks, about 3¼ oz (90 g)
¾ cup granulated sugar (150 g)
1 lb mascarpone, cold (450 g)
6 oz pure pistachio paste (170 g)
1 cup heavy cream, cold (240 ml)
1 tsp vanilla extract (5 ml)
¼ tsp fine sea salt
Coffee Soak and Assembly
2 cups strong espresso (475 ml), completely cooled
2 tbsp Marsala (30 ml), optional
32 to 36 Italian savoiardi, about 10½ oz (300 g)
⅓ cup unsalted pistachios (45 g), lightly toasted and chopped
¼ cup pistachios (30 g) and 2 tbsp pistachio paste (30 g) for finishing
Preparation
1. Espresso and Pistachios
Prepare strong espresso and cool completely. Add Marsala only after cooling. Toast pistachios at 325°F (165°C) for 5 to 7 minutes, cool, then chop finely without reducing them to powder.
2. Egg Base
Whisk yolks and sugar over gently simmering water until pale, thick and 160°F (71°C), about 5 to 7 minutes. Remove from the heat, whisk 2 minutes longer and cool until only slightly warm.
3. Mascarpone Cream
Work cold mascarpone briefly with a spatula. Fold in pistachio paste, vanilla and salt, then incorporate the cooled yolk mixture in three additions. Whip heavy cream to medium peaks and fold it into the mascarpone in three additions. Refrigerate 15 minutes.
4. Assembly
Spread a thin layer of cream in a 9 × 13 inch (23 × 33 cm) dish. Dip each savoiardo in cold espresso for about 1 second per side. Arrange a tight layer, cover with half the pistachio mascarpone and a restrained amount of chopped pistachios. Repeat with a second layer of dipped savoiardi and the remaining cream.
5. Chill and Finish
Cover without touching the surface and refrigerate at least 8 hours, preferably overnight. Finish with chopped pistachios and a small amount of pistachio paste loosened with a little cream if necessary.
Professional Technique
Temperature, pistachio concentration and moisture control determine the final texture. Mascarpone must remain cold and should never be aggressively whipped because its fat structure can break. Pistachio paste contributes substantial fat, so adding more does not automatically improve the dessert. Whipped cream provides aeration rather than simple richness.
Savoiardi continue absorbing moisture during refrigeration. A quick dip is enough; saturating them during assembly produces a wet, collapsing tiramisù the following day. The long refrigeration period is part of the recipe because it allows biscuit and cream to become cohesive.

Storage & Reheating
Keep refrigerated at 40°F (4°C) or below and consume within 3 days. The best texture is generally reached 8 to 24 hours after assembly. Do not reheat. Freeze for up to 1 month only if necessary and thaw overnight in the refrigerator.
