Story of the Dish
The Torta Paradiso is one of Northern Italy's most elegant and delicate cakes, originating in the city of Pavia, Lombardy, during the late nineteenth century. It was created by pastry chef Enrico Vigoni, whose bakery became famous for producing a cake so soft and light that customers described it as tasting like "a piece of paradise." The name Torta Paradiso was born from that very compliment.
Unlike richer Italian desserts, Torta Paradiso celebrates simplicity. Its secret lies in a butter-rich sponge that is whipped until exceptionally airy, creating an incredibly tender crumb that almost melts in your mouth. While the original version is served simply dusted with powdered sugar, modern Italian pastry shops often transform it into a spectacular celebration cake by filling it with a delicate milk cream.
The contrast between the feather-light sponge and the silky cream creates one of Italy's most refined desserts—perfect for birthdays, afternoon coffee, or an elegant Sunday lunch.
Ingredients
Serves: 10–12
For the Cake
2¼ cups (280 g) cake flour
1 cup (225 g) unsalted butter, softened
1¼ cups (250 g) granulated sugar
5 large eggs, room temperature
2 egg yolks
2 tsp baking powder
1 tsp vanilla extract
Zest of 1 organic lemon
Pinch of fine sea salt
For the Milk Cream
2 cups (475 ml) heavy whipping cream
1 cup (240 ml) whole milk
½ cup (60 g) powdered sugar
2 tbsp honey
2 tbsp cornstarch
1 tsp vanilla bean paste or pure vanilla extract

Preparation
Preheat the oven to 340°F (170°C).
Grease and line a 9-inch (23 cm) round cake pan with parchment paper.
In a large mixing bowl, beat the softened butter and sugar for 8–10 minutes, until the mixture becomes pale, fluffy, and almost white. This step is essential for achieving the signature light texture of Torta Paradiso.
Add the eggs one at a time, beating well after each addition. Incorporate the egg yolks, vanilla, and lemon zest.
Sift together the cake flour, baking powder, and salt. Fold the dry ingredients gently into the butter mixture just until incorporated.
Pour the batter into the prepared pan and smooth the surface.
Bake for 35–40 minutes, or until the cake is lightly golden and springs back when gently pressed.
Allow the cake to cool completely.
Prepare the Milk Cream
Heat the milk with the honey and vanilla until just warm.
Whisk together the cornstarch with a few tablespoons of cold milk until smooth, then add it to the saucepan.
Cook gently until slightly thickened.
Transfer to a bowl, cover with plastic wrap touching the surface, and chill completely.
Whip the heavy cream with the powdered sugar until medium peaks form.
Fold the cold milk mixture into the whipped cream using a spatula until perfectly smooth and airy.
Assemble
Slice the cake horizontally into two even layers using a serrated knife.
Spread the milk cream generously over the bottom layer.
Place the second layer on top without pressing too hard.
Refrigerate for at least 2 hours before serving to allow the cream to set.
Finish with a generous snowfall of powdered sugar.
