17.64 oz mascarpone, cold

6.76 fl oz heavy cream, cold

2.82 oz powdered sugar

2.03 fl oz freshly brewed Italian espresso

Preparation

1. Prepare the Espresso

Brew 2.03 fl oz of strong Italian espresso.

The coffee should be concentrated and aromatic because excessive liquid will weaken the structure of the mascarpone cream.

Transfer the espresso to a small container and allow it to cool completely.

Do not incorporate hot or warm espresso directly into mascarpone.

For best results, refrigerate the espresso briefly before preparing the cream.

2. Prepare the Mascarpone
