Story of the Dish


Few desserts represent Italian home baking better than the classic jam crostata. Found in bakeries, cafés, and family kitchens from the Alps to Sicily, this simple tart has been part of Italian culinary tradition for centuries. Every region has its own favorite filling, but apricot preserves remain one of the most beloved choices because of their perfect balance of sweetness and gentle acidity.

Unlike many modern desserts overloaded with creams and decorations, the crostata celebrates simplicity. A perfectly made pasta frolla should be buttery, crumbly, fragrant with lemon and vanilla, and sturdy enough to support the filling while remaining delicate enough to melt in your mouth.

Whether served for breakfast with cappuccino, as an afternoon snack, or as the finale to a Sunday family lunch, a well-made crostata is timeless. The secret lies not in complicated techniques but in using excellent butter, fresh eggs, quality flour, and a premium Italian apricot preserve.


Ingredients

Serves: 8–10

For the Pasta Frolla

2½ cups (11.11 oz) all-purpose flour

¾ cup (6 oz) unsalted European-style butter, cold and diced

¾ cup (5.29 oz) granulated sugar

2 large egg yolks

1 whole egg

1 teaspoon vanilla extract

Zest of 1 organic lemon

¼ teaspoon fine sea salt

1 teaspoon baking powder

Filling

1½ cups (15.87 oz) high-quality apricot preserves

For Finishing

1 egg yolk

1 tablespoon milk

Powdered sugar (optional)


Preparation

Prepare the Dough

In a large bowl, combine the flour, baking powder, sugar, and salt. Add the cold butter and rub it into the flour with your fingertips until the mixture resembles coarse breadcrumbs. Work quickly to prevent the butter from warming.

Add the egg yolks, whole egg, vanilla, and lemon zest. Mix just until the dough comes together. Avoid overworking the dough, as excessive mixing develops gluten and makes the crust tough instead of tender.

Shape into a flat disk, wrap tightly in plastic wrap, and refrigerate for at least one hour. Chilling allows the butter to firm up and relaxes the gluten, producing a much flakier pastry.

Prepare the Tart

Preheat the oven to 350°F (347°F).

Butter and lightly flour a 9-inch (9.06 in) tart pan.

Roll about two-thirds of the chilled dough to approximately ⅛ inch (3 mm) thick. Carefully line the tart pan, gently pressing the dough into the corners without stretching it. Trim any excess.

Spread the apricot preserves evenly over the crust, leaving about ½ inch around the edge.

Roll out the remaining dough and cut strips about ¾ inch (0.79 in) wide. Arrange them diagonally over the jam to create the traditional lattice pattern.

Brush the lattice and edges with the egg wash.

Bake

Bake for 35–40 minutes, or until the pastry turns a rich golden brown and the preserves begin to bubble gently around the edges.

Allow the crostata to cool completely in the pan before removing it. As it cools, the butter sets and the jam firms up, giving clean slices and the proper texture.

Dust lightly with powdered sugar just before serving, if desired.


Chef Tips

Always use cold butter . It is the key to a crisp, crumbly pasta frolla.

Refrigerating the dough is essential—never skip this step.

Choose an apricot preserve with a high fruit content (at least 65–70%) for the best flavor.

If the preserves are very thick, stir in one tablespoon of warm water before spreading.

Let the crostata rest for several hours—or overnight—before serving. The flavors deepen, the pastry becomes more balanced, and the slices hold together beautifully.


Wine Pairing

This traditional crostata pairs beautifully with:

Moscato d'Asti  for a light, aromatic finish.

Vin Santo Toscano  for a richer, classic Italian dessert pairing.

Fresh espresso or cappuccino if served for breakfast or afternoon coffee.
