Pizza dough looks simple because the ingredient list is short. In reality, flour, water, salt, yeast, temperature, fermentation time, gluten development, and oven temperature all change the final result.

This recipe contains three complete Italian pizza dough methods, each designed for a different fermentation schedule. They are not one dough with three timing options. Each version has its own yeast quantity, hydration, fermentation management, and ideal use.

The first is designed for pizza made the same day. The second uses a controlled 24 hour fermentation and offers a major improvement in flavor and texture. The third uses a 48 to 72 hour cold fermentation for maximum aroma, extensibility, blistering, and crust development. All three formulas make approximately 4 individual pizzas.

Version 1: Same Day Italian Pizza Dough

A reliable dough when you want to mix, ferment, stretch, and bake pizza on the same day.

Ingredients

4 cups (500 g) Italian Tipo 00 flour

1 1/3 cups plus 1 teaspoon (325 g) water, approximately 70°F (21°C)

2 teaspoons (10 g) fine sea salt

1 teaspoon (3 g) instant dry yeast

Hydration: 65%

Yield: 4 dough balls, approximately 7.4 oz (210 g) each

Preparation

1. Pour 1 1/3 cups plus 1 teaspoon (325 g) water into a large mixing bowl.

2. Add 1 teaspoon (3 g) instant dry yeast and stir until dispersed.

3. Add approximately three quarters of the flour and begin mixing with your hand or a dough hook on low speed.

4. Once the mixture becomes thick but still loose, add 2 teaspoons (10 g) fine sea salt.

5. Gradually incorporate the remaining flour.

6. Knead by hand for approximately 8 to 10 minutes, or mix at low to medium speed for approximately 6 to 8 minutes.

7. The finished dough should be smooth, elastic, slightly tacky, and strong enough to hold its shape.

8. Cover the dough and allow it to rest for 20 minutes.

9. Perform one stretch and fold. Gently pull one side of the dough upward and fold it toward the center. Rotate the dough and repeat on all four sides.

10. Cover and ferment at room temperature, ideally between 72°F and 75°F (22°C and 24°C), for approximately 2 1/2 to 3 hours.

11. Turn the dough onto a clean work surface.

12. Divide it into four equal pieces, approximately 7.4 oz (210 g) each.

13. Shape each piece into a tight, smooth ball by bringing the edges underneath and creating gentle surface tension.

14. Place the dough balls in a covered proofing box or individual lightly covered containers.

15. Proof at room temperature for another 2 to 3 hours.

16. The dough is ready when each ball has visibly expanded, feels soft and aerated, and stretches without strongly springing back.

Version 2: 24 Hour Italian Pizza Dough

This is the most practical fermentation for cooks who want a noticeably more developed pizza without planning several days in advance.

Ingredients

4 cups (500 g) Italian Tipo 00 flour

1 1/3 cups plus 1 tablespoon (330 g) cold water

2 teaspoons (10 g) fine sea salt

1/3 teaspoon (1 g) instant dry yeast

Hydration: 66%

Yield: 4 dough balls, approximately 7.4 oz (210 g) each

Preparation

1. Pour 1 1/3 cups plus 1 tablespoon (330 g) cold water into a mixing bowl.

2. Add 1/3 teaspoon (1 g) instant dry yeast and stir briefly.

3. Add approximately three quarters of the flour.

4. Mix until a rough dough begins to form.

5. Add 2 teaspoons (10 g) fine sea salt.

6. Gradually incorporate the remaining flour.

7. Knead for approximately 8 to 10 minutes by hand, or 6 to 8 minutes in a mixer.

8. Stop kneading once the dough is smooth, elastic, and capable of stretching without immediately tearing.

9. Cover and rest for 20 minutes.

10. Perform one stretch and fold.

11. Leave the dough covered at room temperature for approximately 45 minutes to begin fermentation.

12. Transfer the covered dough to the refrigerator at approximately 38°F to 40°F (3°C to 4°C).

13. Refrigerate for approximately 18 to 20 hours.

14. Remove the dough from the refrigerator.

15. Divide into four approximately 7.4 oz (210 g) portions.

16. Shape each portion into a smooth ball.

17. Place the balls in covered containers and leave them at room temperature for approximately 3 to 4 hours before baking.

18. Properly fermented dough should feel light, extensible, and slightly gassy beneath the surface.

Version 3: 48 to 72 Hour Italian Pizza Dough

This method is intended for cooks looking for greater fermentation complexity, a lighter internal structure, deeper aroma, and superior extensibility. Temperature control becomes much more important with fermentation this long.

Ingredients

4 cups (500 g) Italian Tipo 00 flour

1 7/16 cups (340 g) cold water

2 teaspoons (10 g) fine sea salt

About 1/10 teaspoon (0.3 g) instant dry yeast

Hydration: 68%

Yield: 4 dough balls, approximately 7.5 oz (212 g) each

Preparation

1. Pour 1 7/16 cups (340 g) cold water into a mixing bowl.

2. Add approximately 0.3 g instant dry yeast and disperse thoroughly. For this small amount of yeast, a precision scale is strongly recommended.

3. Add approximately three quarters of the flour and begin mixing.

4. Once a rough dough develops, add 2 teaspoons (10 g) fine sea salt.

5. Add the remaining flour gradually.

6. Knead until the dough becomes smooth, elastic, and well developed. Because of the higher hydration, the dough may feel softer than the previous two versions. Avoid adding additional flour simply to make it easier to handle.

7. Cover and rest for 20 minutes.

8. Perform one controlled stretch and fold.

9. Allow the dough to remain at room temperature for approximately 30 minutes.

10. Transfer it to the refrigerator at approximately 38°F to 40°F (3°C to 4°C).

11. Ferment for approximately 36 to 60 hours before dividing. For a total fermentation close to 48 hours, divide and ball approximately 4 hours before baking. For fermentation approaching 72 hours, maintain strict refrigeration and reduce unnecessary time at room temperature.

12. Remove the dough from the refrigerator.

13. Divide into four approximately 7.5 oz (212 g) portions.

14. Shape gently into smooth dough balls.

15. Avoid pressing aggressively because the dough already contains valuable fermentation gases.

16. Cover and proof at room temperature for approximately 3 to 4 hours.

17. The finished dough should be relaxed, highly extensible, aerated, and easy to open by hand.

How to Shape Italian Pizza Dough

Place one fermented dough ball onto a lightly floured work surface. Dust the top very lightly with flour. Using the pads of your fingers, press gently into the center of the dough.

Move outward while leaving approximately 3/4 inch to 1 inch (2 to 2.5 cm) around the edge untouched. This outer section becomes the cornicione.

Turn the dough several times as you continue pressing outward. Once the center is large enough, lift the dough onto the backs of your hands and gently stretch it while rotating. Gravity should do much of the work.

For an individual pizza, stretch to approximately 10 to 12 inches (25 to 30 cm). Never crush the edge. Never use a rolling pin if you want an airy cornicione. A rolling pin forces fermentation gases from the dough and produces a flatter, denser crust.

Baking the Pizza

The hotter the oven, the shorter the baking time.

Pizza Oven

Preheat the oven to approximately 750°F to 850°F (400°C to 455°C). Bake for approximately 60 to 120 seconds, rotating as necessary for even coloring.

Home Oven with Pizza Steel

Place the steel in the upper third of the oven. Preheat at the highest available temperature, preferably 500°F to 550°F (260°C to 290°C), for at least 45 minutes. Bake the pizza directly on the steel. Depending on the oven, cooking usually takes approximately 4 to 7 minutes. Using the broiler for the final portion of cooking can improve top heat and cornicione coloration.

Home Oven with Pizza Stone

Preheat the stone for at least 45 to 60 minutes at the oven's maximum temperature. A stone stores less intense heat than a steel, so baking may take slightly longer.

Professional Technique

Choose the Correct Flour

Tipo 00 refers primarily to the degree of milling, not automatically to protein strength. For long fermentation, use a flour strong enough to withstand extended fermentation. A very weak flour can lose structure before a 72 hour dough reaches the oven. For the 48 to 72 hour version, a pizza flour around 12.5% to 13.5% protein, depending on the mill and flour specification, is generally more appropriate than an extremely soft flour.

Control Dough Temperature

Dough temperature is one of the most important variables in pizza making. For the same day version, a final dough temperature around 75°F to 77°F (24°C to 25°C) works well. For long fermentation, keeping the finished dough slightly cooler helps control yeast activity. Warm kitchens require colder water. Cool kitchens may require slightly warmer water. The clock is useful, but the dough itself determines when fermentation is complete.

Develop Gluten Without Overworking the Dough

Pizza dough needs sufficient gluten development to trap fermentation gases and stretch without tearing. It does not need to be beaten aggressively. Stop mixing once the dough becomes elastic and reasonably smooth. Resting and folding will continue strengthening the gluten structure.

Use Flour Carefully

Excess bench flour changes the formula, dries the outside of the dough, and can burn underneath the pizza. Use only enough flour to prevent sticking. For launching pizza, finely ground semolina can be used sparingly, particularly in a home oven.

Fermentation Is More Important Than Yeast Quantity

More yeast does not produce better pizza. Yeast quantity should decrease as fermentation time increases. The objective is controlled fermentation, not rapid inflation. A dough that has simply doubled quickly is not necessarily mature. Properly fermented dough develops aroma, acidity, extensibility, and internal gas structure gradually.

Chef Tips

Weigh ingredients whenever possible. Pizza dough is far more consistent when measured in grams.

Weigh water as well as flour. One gram of water equals approximately one milliliter, which makes hydration calculations simple and accurate.

Use a digital scale capable of measuring tenths of a gram for long fermentation yeast quantities.

Keep dough containers covered. A dry skin makes shaping difficult and can create tough areas after baking.

Let refrigerated dough warm sufficiently before opening.

If the dough repeatedly snaps back while stretching, it is either too cold, insufficiently rested, or not fully relaxed.

Stretch the center thinner than the rim.

Use toppings sparingly. Excess sauce, cheese, or wet ingredients prevent proper bottom cooking.

Drain fresh mozzarella before placing it on the pizza.

Build and bake the pizza quickly after stretching. A topped pizza left sitting on the peel can stick.

Common Mistakes

Adding Too Much Flour

Sticky dough does not automatically mean the formula is wrong. Freshly mixed dough becomes easier to handle as the flour hydrates and gluten develops. Adding large quantities of flour changes hydration and creates a heavier crust.

Overproofing

Overproofed dough becomes weak, excessively sticky, and difficult to shape. It may collapse during stretching and produce poor oven spring. Long fermentation requires careful refrigeration.

Underproofing

Underproofed dough is tight and elastic. It fights against stretching and shrinks immediately after being opened. The baked crust tends to be dense.

Using Warm Water for Long Fermentation

Warm water can accelerate yeast activity too aggressively before the dough reaches refrigerator temperature. Cold water gives better control for 24 hour and longer fermentation.

Using Too Much Yeast

More yeast is not a shortcut to mature flavor. It simply accelerates fermentation. Long fermentation requires very small quantities.

Rolling the Dough

Rolling removes much of the gas created during fermentation and compresses the cornicione. Open pizza dough by hand.

Using Cold Dough Straight From the Refrigerator

Cold dough can be difficult to stretch and may tear. Give it enough time to relax and approach room temperature before opening.

Overloading the Pizza

A thin pizza base cannot support excessive moisture. Use a moderate layer of sauce and properly drained toppings.

Which Pizza Dough Version Is Best?

For pizza tonight, use the Same Day Italian Pizza Dough. It provides the fastest fermentation while still producing good oven spring and structure.

For the best balance between convenience and quality, use the 24 Hour Italian Pizza Dough. The additional fermentation improves flavor, browning, extensibility, and crust texture without requiring several days of planning.

For maximum fermentation character, choose the 48 to 72 Hour Italian Pizza Dough. This method gives the most complex aroma and the most relaxed dough, provided fermentation temperature is carefully controlled.

For most home cooks, the 24 hour version is the strongest everyday method.

Wine Pairing

Pizza pairing depends primarily on the toppings rather than the dough itself. For a classic tomato based pizza such as Margherita, look for wines with freshness and enough acidity to work with tomato.

Barbera d'Asti is a particularly versatile choice because its acidity refreshes the palate without overwhelming the pizza. For richer pizzas with sausage, cured meats, or mushrooms, Chianti Classico can provide additional structure and savory complexity.

For lighter white pizzas, vegetables, or seafood toppings, Falanghina offers freshness, citrus character, and mineral notes. Sparkling wines also work extremely well with pizza. A dry Lambrusco is especially effective with cured meats and richer toppings.

Storage and Reheating

Refrigerating Dough

The same day dough can be refrigerated if plans change, but reduce room temperature fermentation before chilling. The 24 hour and long fermentation versions are already designed around refrigeration. Keep dough tightly covered so the surface cannot dry out.

Freezing Dough

Pizza dough freezes well. Allow fermentation to develop first, then divide and shape the dough into individual balls. Lightly coat the container with a minimal amount of olive oil if needed to prevent sticking. Freeze tightly sealed and use within approximately 1 month for best quality.

Thaw overnight in the refrigerator, then bring the dough to room temperature for approximately 3 to 4 hours before stretching.

Reheating Baked Pizza

For leftover pizza, avoid the microwave when possible because it softens the crust. Heat a skillet over medium low heat, add the pizza, and cover loosely for a few minutes. This reheats the topping while restoring some crispness to the bottom. A preheated oven at 400°F (205°C) also works well.
