Neapolitan Impepata di Cozze Traditional Recipe from Naples, Campania

Story of the Dish

Few dishes represent the soul of Naples better than Impepata di Cozze. Dating back centuries, this humble seafood dish was traditionally prepared by fishermen returning to the harbor with baskets full of freshly harvested mussels. Its name, Impepata, comes from the generous amount of freshly cracked black pepper that flavors the broth.

Unlike many seafood recipes, this classic contains only a handful of ingredients. The mussels release their naturally briny juices while steaming, creating an intensely flavorful broth that combines with extra virgin olive oil, garlic, parsley, and plenty of black pepper. The result is an elegant dish that proves great Italian cooking relies on simplicity and exceptional ingredients.

Today, Impepata di Cozze is a staple throughout Campania, often served as an appetizer or light dinner alongside toasted rustic bread and a chilled glass of white wine.

Ingredients

5 lb fresh Mediterranean-style mussels, cleaned and debearded

4 garlic cloves, lightly crushed

¼ cup extra virgin olive oil

½ cup fresh Italian parsley, finely chopped

2 tbsp freshly cracked black pepper

1 small fresh red chili (optional)

1 lemon, cut into wedges

Rustic Italian bread, toasted

Preparation

Step 1 – Clean the Mussels

Scrub the shells thoroughly under cold running water.

Remove the beard by pulling firmly toward the hinge.

Discard any mussels with cracked shells or those that remain open after being tapped.

Step 2 – Build the Flavor

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat.

Add the crushed garlic and, if using, the chili pepper.

Cook gently for about 2 minutes until fragrant without allowing the garlic to brown.

Step 3 – Steam the Mussels

Increase the heat to high.

Add all the mussels to the pot.

Cover immediately with a tight-fitting lid.

Cook for 4–5 minutes, shaking the pot occasionally.

As soon as the shells have opened, remove the pot from the heat.

Discard any mussels that remain closed.

Step 4 – Finish the Dish

Sprinkle generously with freshly cracked black pepper.

Add the chopped parsley.

Gently toss everything together so the mussels are coated in the aromatic broth.

Taste the broth before seasoning—additional salt is almost never necessary.

Step 5 – Serve

Transfer the mussels into warm serving bowls.

Ladle the cooking broth over the top.

Finish with an extra drizzle of premium extra virgin olive oil.

Serve immediately with toasted rustic bread for dipping and fresh lemon wedges on the side.

Professional Technique

Seafood quality and temperature control are decisive. Dry the surface before searing, avoid overcrowding the pan, and stop cooking as soon as the center reaches the intended doneness. Shellfish should open cleanly and be removed from heat promptly; delicate fish benefits from gentle handling and minimal reheating.

Chef Tips

  • Buy mussels the same day you plan to cook them.

  • Never soak mussels in fresh water, as they will lose their natural flavor.

  • Do not overcook—the mussels should open and remain tender.

  • Freshly cracked black pepper is the defining ingredient of this dish; don't substitute pre-ground pepper.

  • Always strain the cooking liquid if you notice any sand before serving.

  • Serve immediately while the broth is piping hot.

Traditional Variations

Spicy Version

With Cherry Tomatoes

Keep the preparation focused on the principal ingredient in Neapolitan Impepata di Cozze (Peppered Mussels) Traditional Recipe from Naples, Campania. Taste before final seasoning, control heat carefully, and adjust consistency with cooking liquid or stock rather than unnecessary cream. Prepare garnish and serving plates before the final cooking stage so the dish can be served at its best texture and temperature.

Chef Gianluca’s Recommendation

For the best result, prioritize ingredient quality and execute the basic technique cleanly before adding decorative touches. The finished recipe should taste balanced first; presentation comes second. Make the final adjustment for salt, acidity, sweetness, or texture immediately before service, then serve without unnecessary delay.
