Ingredients
For the Pastry
2 cups all-purpose flour
½ cup granulated sugar

1 large egg
2 large egg yolks
1 tsp finely grated lemon zest
½ tsp vanilla extract

3 tbsp candied orange peel, finely diced

½ cup sliced almonds
2 tbsp granulated sugar
1 tbsp honey
1 tbsp unsalted butter

For the Lemon Orange Gel
½ cup fresh orange juice
¼ cup fresh lemon juice
3 tbsp granulated sugar
1 tsp cornstarch
For the Ricotta Cream
1 cup sheep’s milk ricotta, well drained
3 tbsp powdered sugar
½ tsp vanilla extract
½ tsp finely grated lemon zest
For Finishing
Toasted almonds
Chopped pistachios
Fresh orange zest

Preparation
1. Prepare the Pastry
Combine flour, sugar, salt, and lemon zest. Add the cold butter and work it into the flour until the mixture resembles coarse crumbs. Add the egg, egg yolks, and vanilla. Mix only until the dough comes together. Shape into a disk, wrap, and refrigerate for 1 hour.
2. Prepare the Fig Filling
Combine the dried figs, almonds, walnuts, honey, candied orange peel, raisins, Marsala, cinnamon, cloves, and orange zest. Mix thoroughly and allow the filling to rest for 20 minutes. It should become cohesive but retain visible pieces of fruit and nuts.
3. Shape the Nucatoli
Roll the chilled pastry to approximately ⅛ inch thick. Cut into eight rectangles approximately 4 x 2 inches. Spoon the filling lengthwise down the center. Fold the pastry edges partially around the filling, leaving a narrow section exposed along the top in the traditional style.
Transfer to a parchment-lined tray and bake at 350°F for 15–18 minutes, until lightly golden. Cool completely.
4. Prepare the Almond Crisp
Combine sliced almonds, sugar, honey, butter, and salt. Spread very thinly on parchment paper and bake at 350°F for 7–9 minutes, until golden. Cool completely and break into irregular shards.
5. Prepare the Lemon Orange Gel
Combine orange juice, lemon juice, sugar, and cornstarch in a saucepan. Cook over medium heat until glossy and lightly thickened. Cool completely. The gel should remain bright and acidic rather than excessively sweet.
6. Prepare the Ricotta Cream
Pass the drained ricotta through a fine sieve. Mix with powdered sugar, vanilla, and lemon zest until smooth. Refrigerate until needed.
