La palamita è un pesce azzurro straordinario, saporito, compatto e molto mediterraneo. Ha una struttura simile al tonno ma un carattere più deciso. Story of the Dish La palamita è presente da secoli nella cucina costiera italiana, soprattutto nelle regioni affacciate sul Tirreno e nel Sud. È un pesce dalla carne scura, ricca e saporita. Proprio per questo ha bisogno di cotture brevi e di accompagnamenti freschi. La combinazione con peperoni, prezzemolo, acciughe e pane carasau costruisce un piatto profondamente italiano e mediterraneo. La salsa verde introduce acidità e sapidità. Ingredients For the Bonito: 4 bonito fillets, approximately 6 oz each; 2 tbsp extra virgin olive oil; kosher salt; freshly ground black pepper; 1 tsp finely grated lemon zest. For the Roasted Peppers: 2 red bell peppers; 1 yellow bell pepper; 2 tbsp extra virgin olive oil; 1 small garlic clove; 1 tbsp red wine vinegar; sea salt; fresh basil leaves. For the Anchovy Salsa Verde: 1 packed cup Italian parsley leaves; 2 anchovy fillets in olive oil; 1 tbsp capers, rinsed; 1 small garlic clove; 1 tbsp red wine vinegar; 1 tbsp fresh lemon juice; 1/2 cup extra virgin olive oil; freshly ground black pepper. For the Pane Carasau: 4 pieces pane carasau; 1 tbsp extra virgin olive oil; sea salt. For Finishing: fresh parsley leaves; lemon zest; extra virgin olive oil; a few capers.

Roasting the Peppers Place the peppers directly over a gas flame, charcoal grill or under a very hot broiler. Turn frequently until the skin is completely blackened. Transfer to a bowl. Cover and allow them to steam for approximately 10 minutes. Peel away the burned skin. Remove the seeds and membranes. Do not rinse the peppers under water. Cut into elegant strips. Dress with extra virgin olive oil, red wine vinegar, garlic and a small amount of salt. Add several torn basil leaves. Allow the peppers to rest for approximately 15 minutes so the flavors develop.

Anchovy Salsa Verde Finely chop the parsley. Add the anchovies, capers and garlic. Continue chopping until the mixture becomes fine but still retains some texture. Transfer to a bowl. Add red wine vinegar and lemon juice. Slowly stir in the extra virgin olive oil. Season with black pepper. Taste before adding salt. Anchovies and capers already provide substantial salinity. The sauce should be bright, herbaceous and slightly acidic.

Pane Carasau Preheat the oven to 350°F. Brush the pane carasau very lightly with olive oil. Sprinkle with a tiny amount of sea salt. Bake for approximately 3 to 4 minutes. It should become extremely crisp. Break into irregular elegant shards. Reserve dry.

Preparing the Palamita Check carefully for pin bones. Pat the fillets completely dry. Remove the fish from refrigeration approximately 10 minutes before cooking. Season with salt and black pepper. Add a very small amount of lemon zest. Do not marinate the fish in citrus juice before grilling.

Grilling the Palamita Preheat a charcoal or gas grill until very hot. Clean the grates thoroughly. Oil them lightly. Brush the fish with extra virgin olive oil. Place the fillets onto the grill. Cook the first side for approximately 2 minutes. Turn carefully. Cook the second side for approximately 1 to 2 minutes, depending on thickness. For a restaurant style preparation, the center should remain moist and slightly pink. Target approximately 120 to 125°F for medium rare. If you prefer it more cooked, continue only briefly. Rest for approximately 2 minutes.

Alternative Pan Method If a grill is unavailable, use a heavy cast iron skillet. Heat until very hot. Add a very small amount of olive oil. Sear the fish approximately 2 minutes on the first side and 1 to 2 minutes on the second. The exterior should develop color while the center remains juicy.

Final Balance Taste the peppers. They should have sweetness from roasting and enough vinegar to contrast with the oily fish. Taste the salsa verde. It must be powerful but fresh. If it tastes too salty, add additional parsley, olive oil and lemon juice rather than water.

Michelin Style Plating Place several roasted pepper strips slightly off center. Arrange two clean pieces of palamita fillet over the peppers, skin side or seared side visible. Then keep the composition extremely clean: two pieces of palamita, a small quantity of peppers, salsa verde, one shard of pane carasau and excellent olive oil. This is a dish where simplicity becomes sophistication when every component is prepared precisely.
