Wine Pairing: Dolcetto di Ovada Superiore DOCG

Dolcetto di Ovada Superiore DOCG, also permitted under the shorter name Ovada DOCG, is one of Piedmont’s most structured and age-worthy expressions of the Dolcetto grape.

Produced in the Alto Monferrato hills surrounding Ovada, this is a completely dry red wine characterized by dark fruit, floral aromas, firm tannins, moderate acidity, and a distinctive almond finish. Its savory personality makes it especially successful with braised meat, game, mushrooms, stuffed pasta, polenta, truffles, and aged cheese.

Denomination Overview

Dolcetto di Ovada Superiore received DOCG recognition in 2008. Its production area includes 22 municipalities in the province of Alessandria, with Ovada at the center of the denomination.

The vineyards must be planted on hillsides at elevations no higher than 1,969 feet or 600 meters above sea level. The soils include clay, limestone, tuff, and mixed compositions that help give the wine concentration, structure, and aromatic depth.

The denomination includes:

  • Dolcetto di Ovada Superiore or Ovada

  • Dolcetto di Ovada Superiore Riserva or Ovada Riserva

  • Dolcetto di Ovada Superiore Vigna or Ovada Vigna

  • Dolcetto di Ovada Superiore Vigna Riserva or Ovada Vigna Riserva

Standard Dolcetto di Ovada Superiore requires at least 12 months of aging. Wines carrying the Vigna designation require at least 20 months, while Riserva wines must mature for no less than 24 months before release.

The Dolcetto Grape

Dolcetto di Ovada Superiore DOCG must be produced exclusively from Dolcetto grapes.

Despite its name, Dolcetto does not produce a sweet wine. The finished wine is dry, with a naturally fruity aroma and a characteristic bitter-almond sensation on the finish.

Dolcetto is an early-ripening, dark-skinned Piedmontese grape capable of producing deeply colored wines with generous fruit and pronounced tannins. In the Ovada area, hillside vineyards and lower yields give the grape greater structure, concentration, and aging potential.

Young examples emphasize fresh fruit and flowers. With maturation, the wine can develop more complex notes of dried fruit, cocoa, spice, tobacco, licorice, and forest floor.

Tasting Notes

Appearance

Deep ruby red when young, gradually developing garnet reflections with age.

Aromas

Typical aromas include:

  • Black cherry

  • Blackberry

  • Ripe plum

  • Violet

  • Licorice

  • Dried herbs

  • Almond

  • Cocoa

  • Sweet spices

  • Forest floor

Oak-aged wines may also show restrained notes of vanilla, cedar, toast, and tobacco.

Palate

Dolcetto di Ovada Superiore DOCG is dry and generally medium-to-full-bodied. It combines ripe dark fruit with moderate acidity, firm tannins, and a persistent savory finish.

The characteristic almond note becomes particularly noticeable at the end of the palate. Riserva and single-vineyard expressions generally offer greater concentration, softer tannins, and more complex secondary aromas.

Serving Temperature

Serve Dolcetto di Ovada Superiore DOCG at 60–64°F or 16–18°C.

Younger bottles should be served near the lower end of this range. More structured Riserva and Vigna examples can be served closer to 64°F.

Open a young or concentrated bottle approximately 20–30 minutes before serving. Mature bottles should be handled carefully and decanted only when necessary to separate the wine from its sediment.

Use a medium or large red wine glass that allows the dark-fruit and floral aromas to open without making the alcohol appear too prominent.

Pairing Suggestions

The wine’s tannins, dark fruit, and savory character work best with dishes containing protein, fat, roasting, mushrooms, or long-cooked sauces.

Recommended pairings include:

  • Agnolotti and meat-filled ravioli

  • Braised beef or veal

  • Roasted pork

  • Duck

  • Venison and wild game

  • Sausage and meat ragù

  • Porcini mushrooms

  • Polenta

  • Black truffles

  • Taleggio

  • Castelmagno

  • Aged Alpine cheese

Avoid delicate seafood, sweet sauces, and extremely spicy dishes. These combinations can overpower the wine’s fruit or make its tannins appear more aggressive.

Zafferano & Co. Recipes for the Pairing

Venison provides the protein and intensity needed to balance the wine’s tannins. Porcini mushrooms connect directly with its earthy, woodland aromas.

Duck confit softens the wine’s structure, while brown butter, sage, and Piedmont hazelnuts complement its savory and almond characteristics.

Porcini and black truffle reinforce the wine’s earthy complexity. Taleggio contributes the richness and salt required to balance its tannins.

Slow-cooked veal and mushrooms create a rich, savory base, while the wine’s fruit refreshes the palate after each bite.

The beef-and-pork filling gives the tannins sufficient substance. Béchamel softens the pairing, while tomato supports the wine’s fruit and acidity.

The grilled porcini emphasize the wine’s woodland aromas, savory character, and subtle bitterness. This is an excellent meat-free pairing.
