Unlike heavier custard-based desserts, biancomangiare is delicate, aromatic, and naturally suited to a refined restaurant presentation. This version keeps the classic almond profile but presents it with the same open raviolo plating philosophy used throughout this series: a central creamy element, crisp structure, controlled sauce, contrasting texture, and clean negative space.

Ingredients
For the Almond Biancomangiare
2 cups unsweetened almond milk
½ cup heavy cream
½ cup granulated sugar
¼ cup cornstarch
1 tsp vanilla extract
1 tsp finely grated lemon zest
¼ tsp almond extract
Pinch of fine sea salt
For the Almond Tuile
½ cup sliced almonds
¼ cup granulated sugar
2 tbsp all-purpose flour
2 tbsp unsalted butter, melted
1 large egg white
Pinch of salt
For the Orange Sauce
¾ cup fresh orange juice
1 tbsp fresh lemon juice
3 tbsp granulated sugar
1 tsp cornstarch
1 tbsp unsalted butter
For the Pistachio Crumble
½ cup shelled pistachios
¼ cup almond flour
2 tbsp granulated sugar
2 tbsp unsalted butter
Pinch of salt
For Finishing
Toasted sliced almonds
Chopped pistachios
Fresh lemon zest
Fresh orange zest
Small mint leaves, optional
Preparation
1. Prepare the Biancomangiare
In a saucepan, combine almond milk, heavy cream, sugar, cornstarch, lemon zest, almond extract, vanilla, and salt. Whisk thoroughly while still cold to eliminate any lumps. Place over medium-low heat and cook, whisking continuously, until the mixture thickens and begins to gently bubble. Continue cooking for about 1 minute. Remove from the heat and pass through a fine sieve for an exceptionally smooth texture.
Pour into four small silicone molds or ramekins. Allow to cool slightly, then refrigerate for at least 3 hours, until fully set.
2. Prepare the Almond Tuile
Preheat the oven to 350°F. Combine sliced almonds, sugar, flour, melted butter, egg white, and salt. Spoon thin portions onto a parchment-lined baking sheet and spread into rounds approximately 4 inches wide. Bake for 8–10 minutes, until golden around the edges. While still warm, gently shape if desired. Cool completely before handling.
3. Prepare the Orange Sauce
Combine orange juice, lemon juice, sugar, and cornstarch in a small saucepan. Cook over medium heat while whisking until lightly thickened. Remove from the heat and whisk in the butter. The sauce should remain glossy and fluid.
4. Prepare the Pistachio Crumble
Combine chopped pistachios, almond flour, sugar, butter, and salt. Spread on a parchment-lined baking tray and bake at 350°F for 8–10 minutes, until lightly toasted. Cool completely.
Open Raviolo Style Plating
Place one portion of chilled biancomangiare slightly off-center on each plate. Rest one almond tuile partially over the cream, leaving the structure visibly open rather than covering it completely. Spoon several small dots of orange sauce around the plate. Add a controlled line or cluster of pistachio crumble beside the cream. Finish with toasted almonds, chopped pistachios, very fine lemon zest, and orange zest. The plate should remain clean and architectural, with the cream clearly visible between crisp and textured elements.
Professional Technique
The biancomangiare should be cooked slowly and whisked continuously. Excessive heat can cause uneven thickening or scorching.
Cornstarch must be fully dispersed before the pan is heated. Adding it to hot liquid directly can create lumps.
The almond tuile must be spread thinly and baked until fully crisp. A soft tuile will lose the textural contrast essential to this presentation.
The orange sauce should bring acidity, not additional heaviness. Keep it bright and relatively thin.
