Tiliccas are among Sardinia’s most distinctive filled pastries, recognizable by their narrow open shape and dark aromatic filling. Sapa, the concentrated grape must used in traditional Sardinian sweets, gives the filling its deep fruit character, while almonds and orange zest add texture and freshness.

Ingredients
For the Pastry
2 cups all-purpose flour
4 tbsp lard or unsalted butter
1/2 tsp fine sea salt
1/2 cup warm water, as needed
For the Filling
3/4 cup sapa
1 cup finely ground almonds
1/3 cup fine breadcrumbs
1 tsp finely grated orange zest
1/2 tsp finely grated lemon zest
1/2 tsp ground cinnamon
For the Plate
4 oz ricotta or mascarpone
1 tbsp powdered sugar
2 tbsp sapa
Toasted almonds
Fresh orange zest
Preparation
1. Prepare the Filling
Warm sapa over low heat. Stir in almonds, breadcrumbs, citrus zest, and cinnamon until a thick paste forms. Cool completely.
2. Prepare the Dough
Rub lard into flour and salt, then add warm water gradually until a smooth, firm dough forms. Knead briefly and rest 30 minutes.
3. Shape the Tiliccas
Roll the dough very thin and cut into narrow strips. Place a line of filling in the center. Lift and pinch the sides while leaving the top open.
4. Bake and Plate
Bake at 340°F for 20 to 25 minutes, keeping the pastry pale. Serve with a small spoonful of lightly sweetened ricotta, reduced sapa, toasted almond, and orange zest.
Professional Technique
The filling must be completely cool before shaping. Roll the dough very thin because thick pastry overwhelms the filling. Keep the top open and use small pinches to create the decorative shape.
Chef Tips
Reduce the sapa slowly. If the filling is loose, add a little more almond or breadcrumb. Keep unused dough covered. Bake only to a pale golden color.
